I love the flavor of buffalo chicken wings, but never eat them because of their high fat content that leaves my tummy aching for hours afterwards. This is a great way to enjoy the post-regular season football games in a fresh and clean-eating way- Savor the flavors of the typical tailgate fare while leaving the indigestion and saturated fat on the sidelines!
Kickin’ Buffalo Chicken Salad
- 2 lbs chicken breasts, grilled*
- 3 large carrots, chopped
- 2 celery stalks, chopped (leaves included!)
- 1/3 cup onion, chopped
- 8 cups spinach leaves
- Bolthouse blue cheese dressing*
- Hot sauce (I use Cholula Chipotle)
Divide the spinach leaves among 4 salad plates. Top with the carrots, celery, and onion. Lay sliced, grilled chicken breasts over the bed of vegetables. Drizzle with the blue cheese dressing and add several dashes of hot sauce. Grab your fork and dive in!
