My Publix Value Meal

I went grocery shopping today and splurged just a tad for dinner tonight. Thankfully, all my items that I used were on sale this week at Publix. Tonight I grilled a london broil. While I love red meat, I do not often eat it. However, this cut of beef is one of the leaner cuts. Along side the london broil, I grilled asparagus and mushrooms, and made brown rice with hummus topped with fresh tomatoes. I also put red grapes and blueberries out on the table for the kids to munch on while dinner was cooking.
London Broil

I.5-2 lb London Broil
1 Tablespoon Olive oil
Salt and pepper
1 Tablespoon crushed garlic

Rub olive oil on each side of the meat. Sprinkle with salt and pepper and rub on garlic. Place on grill over medium-high heat. Cook about 10 minutes on first side. Flip once and cook another 8 minutes. (This is for medium rare- I like mine to still be mooing when I eat it.) Take off grill and let rest for at least 5 minutes.
Grilled Asparagus and Mushrooms

1 lb Asparagus
1 16 oz Package Sliced Mushrooms
Salt and pepper
1 Tablespoon Olive Oil
1 Teaspoon Crushed garlic

Snap off ends of asparagus. Place asparagus and mushrooms in grill basket (or on foil) and toss with olive oil, s&p, and garlic. Place along side of meat on the grill. Stir every few minutes and remove when grilled to your likeness.
Brown Rice with Hummus and Tomatoes

Cook desired amount of brown rice according to package directions. When finished, stir in 1 tablespoon of hummus per each cup of cooked rice. Top with diced tomatoes.
