Red Beans and Rice on Mardi Gras

Happy Mardi Gras! The closest we get to celebrating with New Orleans around here is by eating some traditional bayou foods, so I whipped up a batch of red beans and rice. And it is extra wonderful when I reach into my freezer to pull out the already cooked rice, beans, and pork tenderloin so it can be ready quickly.  All I had to do was cook the onion and garlic, cut up tomatoes, and add the seasonings. I will also be enjoying leftovers for lunch today! Southern Living has some great red beans and rice recipes. Just remember- in order to make this a super healthy meal, use brown rice and a lean meat. The pork tenderloin was tender and perfect for this. You could also use chicken, shrimp, or a turkey/chicken sausage.
