Publix Healthy Value Meal – Roasted Pork Loin with Chickpea Salad

I love roasting a pork loin or tenderloin. It’s a quick and delicious dinner, and I always have leftovers for another meal like my Cuban Quesadillas or a simple sliced pork BBQ sandwich. You can use whatever herbs you have on hand to season the pork.

Herb-roasted Pork Loin

2 lb pork loin*
1 Tablespoon olive oil
2 teaspoons crushed garlic
1 teaspoon sea salt
1 teaspoon pepper
1 sprig of rosemary

Preheat oven to 350 degrees. Combine oil, garlic, salt, and pepper. Rub into pork loin. Place the rosemary sprig on top. Place in oven and cook about 30-35 minutes or until a thermometer reads 145 degrees. Let rest for at least 5 minutes before slicing.

 

Chickpeas with Summer Vegetables


1 cup chickpeas
½ tomato, diced
½ zucchini, diced*
½ cup grated, packaged carrots
2 Tablespoons red onion, chopped
1 teaspoon crushed garlic
2 Tablespoons olive oil, divided
2 teaspoons red wine vinegar
1 teaspoon Italian seasoning
1 Tablespoon grated Parmesan cheese

Over medium heat, saute zucchini and garlic in 1 tablespoon olive oil for 3-4 minutes.  Let cool. In a medium bowl, add chickpeas, tomato, zucchini, carrots, and onion. Pour in remaining oil, vinegar, Italian seasoning and Parmesan cheese. Toss gently and serve.
