Publix Healthy Value Meal – Creamy Chicken Sausage and Pea Pasta

I was excited to see that, although it wasn’t in the weekly ad, my favorite sausage-Al fresco– was on sale this week at Publix. I avoid nitrates/nitrites, so finding sausage and ham products is a bit more challenging. When I find this on sale, I stock up and freeze the sausage. Click here to also get a $1.00 off coupon. This meal is a great go-to meal because I usually have everything on hand and it is quick.

Creamy Chicken Sausage and Pea Pasta

1 pkg sausage (whichever flavor you like)

1 small onion, diced (about 1 cup)

2-3 garlic cloves, minced

2 Tablespoon olive oil

1/2 lb whole grain angel hair pasta

1 cup frozen peas, slightly thawed

1/3 cup reduced fat cream cheese

Salt and pepper to taste

Reserved pasta cooking water

Begin to cook pasta according to directions. Once pasta is finished, reserve about 1 cup of the cooking water. Drain pasta. Cook sausage links in a large saucepan over medium heat until browned. Remove from pan and slice into bite-sized pieces. Add oil to pan and cook onion and garlic until softened, about 5-7 minutes. Add sausage, pasta, peas, and cream cheese to saucepan. Season with s&p. Gently stir, adding a bit of the reserved pasta water as needed until the pasta is creamy. Serve immediately.

Serves 3-4.
