NYC Day 4 -Ricotta Cheesecake

Ahhhhhhh! One of my favorite indulgences is cheesecake! On my last visit to New York, my mom, aunts, niece, and I ate at a restaurant on 56th St, which is now my favorite dining spot in the City. Our concierge recommended it and I am so glad he did. Montebello Restaurant is an authentic Italian spot that offers huge portions and homemade desserts. This was the first time I had ever tried ricotta cheesecake, and it was so good I went back 2 days later and ordered a slice just for myself (I was pregnant with Joel- that’s my excuse!). While I tried to convience the waiter to share their recipe, he playfully declined. So, I use Giada De Laurentiis’ recipe for Honey Ricotta Cheesecake.  I did make a few substitutions. They are…

For the filling:

*Part-skim ricotta in place of whole milk ricotta

*Reduced-fat cream cheese in place of full-fat cream cheese

*Organic sugar in place of conventional sugar

For the crust I use:

*2 cups cinnamon graham cracker crumbs (Back to Nature, Whole Foods 365, or other “clean” brand)

*1/2 cup extra virgin coconut oil or extra light virgin olive oil
