“Eating Clean on the Cheap” (and making kids happy!)- Tortilla Chicken Strips

$4.99 for 20 Chicken McNuggets

This is what the marquee reads on the area McDonald’s restaurants. Here is a great alternative to the above advertised “happy” meal. My kids’ gave these chicken tenders “two-thumbs up”, and so I am sure your kids will love them as well! They also enjoyed helping create these in the kitchen with me. Part of eating nutritiously is also helping in the preparation of the meal.

Tortilla Crusted Chicken Tenders 

1 lb chicken tenderloins (On sale at Publix)

2 Cups Publix Greenwise Tortilla Chips, crushed (On sale at Publix)

1/2 Cup Whole grain flour (whole wheat, oat, chickpea, etc)

2 eggs, beaten

1 teaspoon garlic powder

1 Tablespoon fresh cilantro, chopped (or any herbs you prefer)

1/2 teaspoon each of  salt and pepper

Olive oil spray (Check out my product review on my Misto sprayer)

Heat oven to 400 degrees. Line a baking sheet with foil. Place a cooling rack on top of the foil. Spray with olive oil. Mix flour, garlic, herbs, and salt and pepper together. Place in a shallow dish.  Also place crushed chips in a separate dish as well as the  eggs in their own  dish. Make an assembly line in the following order: flour, egg, crushed chips. Dredge a piece of  chicken in the flour mixture, then place it in the egg mixture, and finally in the chips, making sure each side is coated well in each step. Place each tender gently on the wire cooling rack. Repeat for each chicken strip. Spray the crusted chicken with olive oil. Bake for 15-18 minutes. Let stand about 5 minutes before serving.

I served the chicken tenders with grilled peaches and blueberries, mini peppers with hummus, and blanched broccoli with Asian ginger dressing. Broccoli, peaches, and berries are also on sale this week at Publix. 🙂
