“Eating Clean on the Cheap” – Grilled Asian Pork Chops, Spring Rolls,and Broccoli and Red Pepper Stir Fry

Grilled Asian Pork Chops

Grilled Asian Pork Chops

  •  1 Tablespoon extra virgin olive oil
  • 1 Tablespoon rice wine vinegar
  • 1 teaspoon freshly grated ginger (buy the root and keep it in your freezer)
  • 2 garlic cloves, minced
  • Salt and pepper to taste
  • Crushed red pepper flakes (optional)

Mix oil and vinegar and all seasonings in a small bowl. Pour over pork chops and allow to marinate for at least 30 minutes. Grill over medium heat about 8-10 minutes per side or until an internal temperature of 140 is reached. Pull off grill and let rest 5 minutes.

Broccoli and Red Pepper Stir Fry

  • 3 Cups broccoli florets
  • 1 Large red pepper
  •  ½ Teaspoon grated ginger
  • 1 teaspoon orange zest
  • Salt and pepper to taste
  • 1 Tablespoon oil

Heat oil over medium-high heat. Add broccoli and red pepper and cook until desired doneness. (I like mine with some crunch still left.) Add ginger, zest and salt and pepper , and cook another 1-2 minutes.

Chung’s Frozen Spring Rolls

I picked up Chung’s Spring Rolls recently because they are made with all-natural ingredients. I toss the sauce out (don’t care for the modified corn starch in it) and use Whole Food’s 365 soy sauce as a dipping sauce instead. They are crispy on the outside and the veggies are well steamed and tasty on the inside. They are nice to have on hand to add as another Asian touch to a meal.

And thanks to Laura for gathering a bunch of mangoes from her parents’-in-law tree! We ate 3 of them in just this meal alone!
