‘Eating Clean on the Cheap’ – Slow Cooker Thai Basil Pork with Green Tea Brown Rice

This is a perfect recipe to use this week with Publix’s sale. They have peppers, stir fry veggie packs, and baby portabellos on sale. Choose whichever Asian vegetables you want to make this easy, crockpot meal.

Slow Cooker Thai Basil Pork Chops

  • 1.5 lbs pork loin chops*
  • 1/2 cup beef broth
  • 1/4 cup orange juice
  • 2 Tablespoons soy sauce
  • 1 Tablespoon freshly grated ginger
  • 2 teaspoons minced garlic
  • 1/3 cup fresh basil, chopped
  • 4 cups Asian veggies – (Thinly sliced carrots sticks,  mushrooms,  peas, broccoli, red peppers)*
  • 3 scallions, chopped
  • pepper to taste
  • 3/4 cup brown rice
  • 2 green tea, tea bags
  • 2 teaspoons crushed red pepper flakes (optional)
  • 2 tablespoons sesame seeds

*On sale at Publix

Lightly spray crockpot with oil. Pour in rice. Place pork on top of rice and season with pepper (no salt- soy sauce is salty enough!). Lay the veggies on top of the pork.  Mix broth and the next 5 ingredients(through basil). Pour over pork. Sprinkle with the scallions and then place a tea bag on each side of the slow cooker, making sure they are resting in the liquid. Cook on low for six hours. You can remove the tea bags after an hour or so. If I am home, I do like to flip the chops about half way through, but it is not necessary. To serve, dish out some rice, veggies, and one pork chop and sprinkle with red pepper flakes and sesame seeds.
