‘Eating Clean on the Cheap’ – Slow Cooker Salsa Chicken Tender Tacos

This is my SIL ‘s super easy and yummy recipe for chicken that’s perfect for filling a taco shell! Frozen chicken tenders, salsa, and a crockpot…gotta live it! You can find it on her blog, If I Could Just Finish the Laundry. (I’m always saying that to myself!)

Slow Cooker Salsa Chicken Tender Tacos

  • Chicken Tenders*
  • Chi Chi’s Salsa*
  • Shredded lettuce
  • Publix Shredded cheese*
  • Diced tomatoes*
  • Toufayan Wraps*
  • Daisy Sour Cream*

Lightly spray the bottom of crock-pot with cooking spray.
Place 1lb frozen chicken (I like to use tenders) in the crockpot.
Cover with 2 cups of your favorite salsa.
Cook on low 7-8 hours. (you do not need to stir)

She also suggests: Remove chicken and sprinkle with cumin powder and a splash of lime juice. That was not part of the original recipe, but I liked what it added to the flavor.
Shred chicken. Add to a wrap and top it with your favorite Mexican flare!
