Creamy Turkey, Cranberry, and Watercress Panini

Who doesn’t love a leftover Thanksgiving turkey sandwich?! This  Panini, with the classic combination of turkey and cranberries, is dedicated to my sister-in-law, Jennifer, who loves these flavors!

If you are making a one-last trip to Publix today, the cream cheese and watercress are both sale, so grab them to make this sandwich on Friday after a long morning of shopping!

For one sandwich:

2 Tablespoons reduced-fat cream cheese, at room temperature

1 Tablespoon dried cranberries, chopped

1/2 teaspoon agave nectar or honey

2 slices whole grain bread

2-3 oz leftover turkey, at room temperature

 1/3 cup watercress

2 teaspoons Earth Balance butter

Heat a grill pan over medium heat. Spread each bread slice with Earth Balance butter spread. Mix cream cheese, cranberries, and agave nectar or honey together.  Spread cream cheese mixture on one slice of bread.  Place watercress and turkey on top of the bread and place other slice on top. Put sandwich, cheese side down, onto grill pan. Place a cast iron skillet or foil-covered brick on top of Panini. Grill 4-5 minutes per side until grill marks appear and cream cheese is melted.
