A Great Find – All-Natural Mexican Rice Mix

Nueva Cocina Mexican Rice Mix
I found this rice mix at Publix in their gluten-free section. (about $2 a box) If you pick up a specialty rice in the conventional rice section, you will typically find it loaded with MSG, modified food starch, artificial colors and flavors , and other various chemicals which is why I just pass on by. I was so happy to find this brand since I love the flavors in Mexican rice. I used my SIL’s Crockpot Salsa Chicken recipe and added in this rice and about 1 cup of chicken stock. I made some key lime sour cream* and put a dollop of that on top of the chicken and rice. It turned out wonderfully and I used the leftovers to make chicken, rice, and black bean quesadillas for the next night’s dinner. I think I could eat Mexican every night-  Odelay!

*Key Lime Sour Cream

  • I cup Friendship Light Sour Cream
  • The juice of one key lime (straight from my tree!) or 1/2 of a regular lime
  • 1 tablespoon freshly chopped cilantro
  • salt and pepper to taste

Mix everything together and serve.
