Cannoli Cookies

If you love cannolis, but want this treat now, here is my quick and easy way to get your fix:

Bake up some Immaculate Baking Co. sugar cookies. Allow them to cool. Mix 1 cup part-skim ricotta cheese with 1/4 cup honey, 1 teaspoon orange zest, and a dash of sea salt. Stir well and then add in 1/4 cup mini chocolate chips. Top each cookie with a tablespoon of the cannoli filling.
