½ package of Barilla small pasta shells*

1 large container 2% cottage cheese (I use all-natural Friendship Cottage Cheese- grab their coupon!)

½ cup Parmesan Cheese

½ medium onion, diced*

3-4 garlic cloves, minced

½ package frozen Bird’s Eye chopped spinach*, thawed and drained

¼ teaspoon fresh nutmeg

Salt and pepper to taste

¾-1 cup Sargento shredded 2% mozzarella cheese*

4-5 cups Gia Russa tomato sauce* (or use my homemade recipe below)

Cook shells to al dente according to directions. Drain and allow to cool. Saute onion and garlic with 1 tablespoon olive oil over medium heat until softened, about 7-8 minutes. Allow to cool. Mix together cottage cheese, Parmesan cheese, spinach, nutmeg, pepper, a small amount of salt, and onion/garlic mixture.

Spray a 9 x 13 pan with olive oil. Fill each shell with about 2 tablespoons of mixture. Place the shells side by side in the pan. Spoon sauce over the shells and top with shredded cheese. Bake at 350 for 20-25 minutes or until bubbly.

You can make this ahead of time and place in the fridge. Pull out about 15 minutes before placing in oven and increase cooking time about 5-10 minutes.

Roasted Tomato Sauce

I had a massive amount of tomatoes sitting in my kitchen so I decide to make my own sauce. (I rarely do this!) I quartered the tomatoes and scooped out the seeds. I placed the tomatoes, some minced garlic, and about a half of an onion (chopped) into a pan. I drizzled some olive oil and sprinkled some salt and pepper over the tomatoes. I roasted them at 400 for about 30 minutes. I poured the pan’s contents into a blender along with 2 tablespoons of tomato paste and some fresh oregano and blended until smooth. It was delicious and a lot easier and cleaner than I thought it would be, so I will be doing this again and freezing leftovers for future use!
