‘Eating Clean on the Cheap’ – Family “Date” Night

This is for your family date night for the pre-Valentine weekend. Assembling sandwiches are a great way to get the kids involved in the kitchen, and they can add or subtract their favorite ingredients so there is no whining at the dinner table 🙂 Just you and your sweetheart  for dinner? Roast Beef and Cheddar with Mushrooms and Onions

*On sale this week at Publix

  • 1 lb Publix Deli top round roast beef*
  • 8 oz Publix 2% shredded cheddar cheese*
  • 16 oz sliced mushrooms*
  • 1/2 large onion, thinly sliced
  • 2 Tablespoons olive oil
  • 8 slices Arnold whole grain bread*
  • Earth Balance butter spread

Pull out roast beef and cheese from the fridge. Heat 1 tablespoon of olive oil in large sauté pan over medium heat. Add mushrooms and cook 10 minutes or until soft. Remove from pan and add the other tablespoon or so of olive oil to the pan. Sauté onions over medium heat for about 5 minutes, stirring often. Drop heat to medium-low and allow onions to caramelize (about another 20-30 minutes).
Spread butter on one side of each bread slice. Place 1/4 lb roast beef  on a slice of bread (unbuttered side). Top with 1/4 cup of shredded cheese, 1/4 of the onions, and mushrooms. Top with another slice of bread, buttered side up. Do the same to make the other 3 sandwiches. Grill over medium heat on each side until toasted and cheese is melted.

Serve with fresh Florida strawberries* and oranges* and Kettle chips* to complete this family-fun meal!
