Dinner to Dessert from the Freezer

In honor of National Frozen Food Month, here is a complete meal from dinner to dessert, straight from the freezer!There are “those days” when dinner is a whirlwind and, while we all prefer a home-cooked meal over pre-made ones, here are a few freezer items that I am willing to pull out for those rushed evenings.

Michael Angelo’s Chicken Piccata– I bought this when it was on sale at Publix and I had a coupon. I served it to the kids on a night when Scott had a meeting, and I didn’t feel like cleaning up the kitchen that night. They ate almost every bite! Michael Angelo’s does not use artificial ingredients, preservatives, or chemicals so I am comfortable giving it to my family when I don’t feel like creating and then cleaning a mess in the kitchen.

Frozen Broccoli Florets – Whether  a name brand or a store brand, my family loves steamed broccoli. I place frozen broccoli in a glass or ceramic bowl (I never steam anything in those “stem fresh” bags- no plastic in my microwave!), place just a bit of water in the bottom, cover with a plate, and cook for just a few minutes until heated through.  I drain off the water, drizzle with a little olive oil, and then sprinkle with some Italian seasoning and sea salt, and they eat it until it’s gone!

Alexia Whole Grain Rolls

These whole grain rolls are just 100 calories a piece and have 3g of fiber. Serve as is, or dress them up with some olive oil or Earth Balance spread and garlic.

Stonyfield Frozen Greek Yogurt

Ok, this stuff is good! For 1/2 cup serving, the vanilla is just 100 calories and 6g of protein. My kids like when I melt some peanut butter in the microwave and drizzle it over the top of the cold frozen yogurt! It also comes in chocolate, blueberry, and honey. Grab a coupon for this wonderful treat!
