‘Eating Clean on the Cheap’- Grilled Chicken with Avocado and Pineapple, Zucchini, and Red Cabbage Ginger Salad

This meal is a prime example of just why I love my grill so much. One meal, all grilled, and an easy clean up!

Grilled Chicken

*On sale this week at Publix

  • 4 chicken breasts*
  • Juice of one fresh lemon
  • Olive oil
  • 2 teaspoons garlic, minced
  • Salt and Pepper to taste
  • 1 avocado, peeled and sliced

Spray the chicken with olive oil and squeeze lemon over the breasts. Season with salt, pepper, and minced garlic. Grill over low to medium low heat until internal temp is 155 (about 30 minutes, turning once halfway through).  Remove from grill and allow to rest at least 5 minutes before slicing and serving. Place one to two slices of avocado on top of chicken. The heat from the chicken warms the avocado and you can smear it into the chicken if desired.

Pineapple, Zucchini, and Red Cabbage Ginger Salad

  • 1 cup fresh pineapple, cut into bite-sized pieces*
  • 1 large zucchini, cut into bite-sized pieces* (conventional zucchini is on sale, organic is not 😦  )
  • 1 cup shredded red cabbage
  • Fresh ginger
  • olive oil

Place pineapple, zucchini, and cabbage in a grill basket. Spray with olive oil. Place on grill over medium low heat. Grill about 20 minutes, stirring often. Remove from grill. Plate up one quarter of the salad onto each plate and peel fresh ginger to place on top of the salad.

This is a very typical meal for me- Lean protein, a mix of veggies, carbs from fruit and vegetables, and some good, healthy fat. Simple, easy, but exceptionally delicious!
