Lasagna in a Mug

A couple of weeks ago, I was craving some Italian for lunch and came up with this quick idea to satisfy my craving.

Lasagna in a Mug

1 cup 2% ricotta cheese

1/8 cup Parmesan Cheese

2 won ton wrappers

½ cup marinara sauce

1 teaspoon Italian seasoning

½ teaspoon garlic powder

Sprinkle of pepper

Mix cheeses, Italian seasoning, garlic powder, and pepper in a bowl. Pour just a bit of tomato sauce into a coffee mug. Next, place half of the cheese mixture in the cup. Place the two won tons on top of the cheeses. Pour half the sauce on the won tons, then the remaining cheese on the sauce, and end with the rest of the sauce. Top with a touch of Parmesan cheese. Place in the microwave for about 2 minutes (cooking time will depend on your microwave.)

You can add cooked chicken or ground meat, to make it heartier if you choose, or add some diced, pre-cooked veggies for more flavor and nutrition. If you have some leftover pasta, you can use that to replace the won tons.
