‘Eating Clean on the Cheap’- Moo Shu Pork Lettuce Wraps

Moo Shu Pork Lettuce Wraps

*On sale this week ( 4/26-5/2/2012) at Publix

  • 1 lb center cut pork chops*, sliced into strips
  • Approximately 3 cups of a mixture of the following vegetables:
  • broccoli*
  • cauliflower*
  • carrots
  • purple cabbage
  • 2 cloves garlic, minced
  • S&P
  • 1 tablespoon low sodium soy sauce
  • 1/2 tablespoon rice wine vinegar
  • 1/3 cup Bolthouse Ginger Sesame Dressing
  • Olive Oil
  • Romaine leaves

Season pork strips with salt, pepper, and garlic. Heat a tablespoon or so of olive oil in a pan over medium heat. Add sliced pork and cook several minutes until slightly pink inside. Remove from pan. Add a touch more olive oil to the pan and begin to sauté veggies. After 5 minutes, add in rice wine vinegar, soy sauce, and ginger dressing. Stir until coated. Add in pork and stir together with vegetables. Top each romaine leaf with pork and veggies. They were a little hard for the kids to eat, so next time I’ll tie them with a couple of thinly sliced carrot or celery strands. Serve with brown rice or soba noodles.
