Mexican Caesar Salad with Grilled Chicken

*On sale this week ( 5/3-5/9/2012) at Publix

  • 1 lb boneless, skinless chicken breasts*, sliced into strips
  • 1 head of romaine
  • 2-3 cloves garlic
  • 2″ strip of anchovy paste
  • 1 teaspoon dry mustard
  • 1/2 cup olive oil
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon lime juice*
  • 1 teaspoon cumin
  • Cayenne pepper to taste (optional)
  • 1 cup diced tomatoes*
  • Tortilla chips* (homemade or store bought)

Season chicken to your liking. (I used a drizzle of olive oil, salt, pepper, garlic, and cumin to match the flavors in the dressing). Grill over medium heat for about 20-25 minutes until internal temperature is 155-160. Pull off grill and allow to rest 5 minutes before slicing.

Meanwhile, place garlic cloves, dry mustard, and anchovy paste onto a cutting board. Mince the garlic with the mustard and paste. Place into a lidded container (I like using a medium-sized mason jar). Add in the olive oil, Worcestershire sauce, lime juice, cumin, and cayenne. Shake well. Use a romaine leaf to taste the dressing. If needed, add more oil or lime juice to adjust the taste if need be. Place the cut romaine into a large bowl and drizzle about half the dressing over the leaves. Toss to coat. Add more dressing if desired. Divide the romaine evenly among 4 salad bowls. Top with sliced chicken breasts, tomatoes, and, crushed tortilla chips.
