Cheeseburger Soup

Leftover burgers from your Memorial Day picnic? Take them, along with all the toppings, and make a one dish dinner for tonight!

  • 1 carton Pacific organic creamy tomato soup
  • 1/3 cup diced onion
  • 2 garlic cloves, minced
  • 1 lb lean ground meat, cooked and crumbled (leftover, grilled burgers make it extra yummy!)
  • 1 cup spinach or romaine, chopped
  • Croutons- 2 whole grain hamburger buns, olive oil, salt, pepper, garlic powder
  • 1 cup 2% shredded cheese
  • 1 cup dill pickles, chopped (I use Whole Foods brand- many others add food coloring so read labels)

To make croutons, spray buns with olive oil and sprinkle with salt , pepper, and garlic powder. Bake at 200 for 30 minutes.

In a large pot, heat about 1 tablespoon olive oil over medium high heat. Add in onion and garlic and saute about 5 minutes. Pour in tomato soup and add the burger and spinach or romaine. Allow to simmer for about 30 minutes. Add in pickles. Dish out soup and top with croutons and cheese.

Makes 4-5 servings.
