‘Eating Clean on the Cheap’ – Pistachio Crusted Chicken

Pistachio Crusted Chicken

For this dish, I like to take frozen chicken breasts, cut them into halves or thirds (a lot less mess when you cut them frozen), thaw, and then coat them. The chicken strips make for a quick-cooking dinner.

*On sale this week (6/7-6/13/2012) at Publix

  • 2 lbs chicken breasts*
  • 1/2 cup pistachios*, chopped
  • 2 tablespoons whole wheat bread crumbs
  • salt, pepper, and garlic powder to taste
  • 4 tablespoons olive oil

Heat olive oil over medium heat in a large pan. Pat thawed chicken strips dry. Season with salt, pepper, and garlic powder. Mix pistachios and bread crumbs together in a shallow bowl or plate. Dredge just one side of each chicken strip into the pistachio mixture. Test oil with the tip of one of the chicken pieces. If it sizzles, it’s ready. If not, let the oil heat up a bit more. Once oil is ready, lay pistachio side down and let brown about 3-4 minutes. Flip and allow to cook through about another 5 minutes or so.

I paired this chicken dinner with some fresh organic blueberries* and fresh mangoes*.
