Last night, we had family over for dinner, and I made a meal inspired by our trip last week down south. I love the flavors of Latin cuisine, so here was our clean Cuban menu (which are also great recipes for your July 4th celebration!)
Pulled Pork Mojo Sandwiches
Corn on the Cob with fresh Guacamole
Cuban Salsa with Tortilla Chips and Spinach Leaves
Lemon Poppy Seed and Coconut Lime Hummus with Graham Crackers
Fresh Pineapple and Grapes
Banana Ice Cream
Pulled Pork Mojo

3 lbs pork loin, cooked and chopped

1 cup broth

1/3 cup olive oil

5 limes, juiced

5-6 garlic cloves, minced

1 teaspoon cumin

salt and pepper to taste
Place all ingredients into a microwave safe bowl. Heat for 30 seconds and then stir. Heat another 30 seconds and pour over pork. Mix together.
Cuban Salsa

1 cup dill pickles, diced

1/3 cup onion, diced

1/2 cup tomato, diced

2/3 cup black beans
-
1/2 cup pickle juice from jar

1 tablespoon fresh cilantro
-
1 garlic clove, minced

Pepper (no salt- pickle juice is salty enough!)
Mix and ingredients into a medium bowl. Allow to chill at least 30 minutes before serving so the flavors can marry. Serve with tortilla chips or over spinach leaves.
