“Fried” Ice Cream

Go to a Mexican restaurant, and you are sure to find fried ice cream on the menu. I love to take a traditional and favorite dish and put a whole and clean spin on it. So here is a “fried” ice cream treat I made for my kids last week- warm and toasted on the outside, and icy and cold on the inside!

  • About 1 cup frozen Greek vanilla yogurt
  • 1 cup brown Rice Krispies
  • 1 tablespoon Earth Balance butter spread, melted
  • Cinnamon
  • Honey

Mix melted butter and brown Rice Krispies in a bowl. With a cookie scoop (a smaller  version of an ice cream scoop), make a ball of frozen yogurt and place in the Rice Krispies and roll until completely coated. Repeat to make a total of four balls. Place on a oven safe pan and put into freezer for an hour or more. When ready to eat, place oven on broil. Place pan of ice cream balls into oven and broil just 2 minutes. Pull out and sprinkle with cinnamon and drizzle with honey. Pick up the ice cream ball and eat with your fingers or serve in a small bowl with a spoon.

  1. Is this frozen yogurt or just yogurt that you have put in the freezer?

    • It is frozen Greek yogurt that you buy in the freezer section. Stonyfield Farms makes it. You can find it at Whole Foods and some Publix stores.
