‘Eating Clean on the Cheap’ – Quick Skillet Chicken with Creamy Sweet Potato and Kale

*On sale this week (7/26-8/1/12) at Publix

  • 1 lb Chicken breasts*, sliced into strips or chicken tenders

  • 2 Medium Sweet Potatoes*

  • 2 cups kale, chopped

  • 1/3 cup onion, diced

  • 2, 8 oz Daisy Reduced Fat Sour Cream*

  • 1/4 cup chicken stock

  • 1 tablespoon tomato paste

  • 3 garlic cloves, minced

  • Pierce sweet potatoes and cook 5-6 minutes in the microwave until soft, but not mushy, to touch. Saute onion, kale, and garlic in olive oil over medium heat for about 5 minutes. Remove from pan and heat additional olive oil in the same pan. Cut up sweet potatoes into bite-sized pieces. Season chicken with salt and pepper. Add the chicken pieces to the pan and cook, flipping after about 3 or 4 minutes or until the underside is browned. Cook for another several minutes until the center is white. Add in tomato paste, sour cream and broth. Stir until mixed and then add in sweet potatoes and kale mixture and mix until coated. Add additional broth if needed. Serve immediately.
