‘Eating Clean on the Cheap’ – Slow Cooker Pimento Cheese Chicken

Pimento cheese sandwiches can often be found at bridal and baby showers, church potlucks, and picnics. This spread, when bought in a store, is often filled with fat and preservatives. Here is my spin on this classic sandwich filling:

Slow Cooker Pimento Cheese Chicken

*On sale this week at Publix (9/6-9/12/2012)

  • 1 lb chicken breasts*

  • 8 oz Roasted Red Peppers*

  • 1/2 cup onion, thinly sliced

  • 1 cup shredded 2% sharp cheddar cheese*

  • 3 garlic cloves, minced

  • 1/2 cup broth

Add a bit of olive oil into a crock pot and pour in broth. Place chicken breasts into slow cooker and season with salt and pepper. Pour a jar of roasted red peppers (liquid included) over the chicken. Place sliced onion and garlic on top of chicken. Set on low for 4-6 hours. When chicken is done, push peppers off the top of the chicken and place shredded cheese on the breasts. Cover again and allow cheese to melt. When cheese is melted, place a breast on a plate and top with the roasted red peppers.
