Easy Homemade Powdered Sugar

At this time of year, you’ll find many recipes that call for powdered or confectioner’s sugar. I decided to make my own for a cream cheese frosting that I needed for some homemade cinnamon rolls (which need some improvement!). I simply cleaned my coffee grinder and ran some organic sugar through it to create the superfine, snowy texture that powdered sugar is known for. I got a great result and placed the remaining powdered sugar in an airtight container for future use.
While my cinnamon rolls turned out more biscuit-like than roll-like, my cream cheese frosting was yummy!

4 oz reduced fat cream cheese (preferably organic) at room temp.
1/2 cup powdered sugar
2 tablespoons almond milk (amount may vary depending on the consistency you want)
Mix all ingredients with a whisk until thoroughly mixed.
Makes enough to ice 12 rolls.

(Or drizzle over french toast or homemade muffins)
