Tomato Basil Pork Loin


Whenever I cook a pork loin, I make sure that I have leftovers. Here is one meal I made with frozen pork…easy and delicious!

  • 1 lb cooked pork loin, cut into cubes

  • 2 tablespoons whole grain flour

  • 2 tablespoons olive oil, divided

  • 1/4 cup shredded carrots

  • 1/4 cup diced onion

  • 2 garlic cloves, minced

  • 4 cups marinara sauce

  • 4 basil leaves, chopped

  • 1/4 cup water, broth, or wine

  • 6-8 large kale leaves, removed from stems and chopped

Heat 1 tablespoon of olive oil over medium heat. Saute onion, garlic, and carrots for about 5 minutes. Remove from pan and set aside. Turn up the heat to medium high. Place pork in a bowl or keep it in the zip top bag you froze it in 🙂 Pour the remaining olive oil over the pork and mix to coat evenly. Sprinkle pork with flour and toss. Place pork in pan to quickly brown- about 1 minute and then flip and again for an additional minute. Turn heat down to medium and add in marinara sauce, the sauteed veggies, and the basil leaves. Pour in water, broth or wine and gently scrape the bottom of the pan to deglaze. Allow to simmer for about 5 minutes. Serve over kale and garnish with fresh basil.
