Spinach Artichoke Dip

This is a great football party snack and a top-selling appetizer at many restaurants but is SO overloaded with calories and bad fat. I took Alton Brown’s recipe recipe and revamped it to cater to my clean eating habits. This was a hit at a recent birthday party even with those who need a total overhaul of their poor eating habits. (Will they ever learn that eating clean will make them feel SO much better?!) Here is a chance to enjoy a ‘tried and true’ favorite and know that you’ve made a healthy choice.

Spinach and Artichoke Dip

1 cup thawed, chopped frozen spinach
11/2 cups jarred artichoke hearts, cut into bite-sized pieces
4 ounces reduced fat cream cheese
1/3 cup plain greek yogurt
1/4 cup clean mayonnaise (I use Whole Foods 365. Earth Balance is also a good choice)
1/3 cup grated Parmesan (the real stuff- not the green container)
1/2 teaspoon red pepper flakes
1/4 teaspoon salt
1 teaspoon garlic powder
1 teaspoon onion powder
Heat cream cheese in microwave for 1 minute or until hot and soft. Stir in rest of ingredients and mix well. Pour into a pie plate and bake in a preheated 400 oven for 15-20 minutes or until bubbly and brown. Serve with veggies or whole grain bread or crackers.
