Mediterranean Farro Salad – “A Salad For Each Week” #10

Okay- so I’m totally behind in my “A Salad for Each Week” series. Vacation, a busted modem (both leading to a “I’m way behind on everything” panic), sick kids with multiple trips to school to pick up the sick kids, and 5 trips to the ballet studio each week has kept me busy. BUT, I still managed to eat well, and this super quick dish is one I made the other night and had leftovers for the next day. I used farro (an ancient grain often used in Italian dishes that is high in protein and fiber) which was something I had for the first time on a food tour of Greenwich Village, and I’ve loved it ever since! I actually used Target’s Simply Balanced Farro that takes 90 seconds in the microwave, and used a few things I had on hand to create this dish.

Mediterranean Farro Salad

  • 1 package Simply Balanced Farro

  • 1/2 cup freshly diced tomatoes

  • 1/2 cup reduced-fat feta cheese

  • 1 teaspoon minced garlic

  • 2 teaspoons olive oil

  • 1/4 cup freshly chopped basil

Cook farro in microwave. (I like to transfer it to a glass bowl and cover with a damp cloth- I don’t like microwaving plastic!) Allow to cool 5 minutes. Add all remaining ingredients and gently stir. Add salt and pepper to taste. Serve alone or on top of fresh romaine leaves.
