Sweet Pepper Salsa – Vitamin-C Packed!

This salsa was created in order to pack a punch of vitamin C to aide in the adequate growth of my newly repaired bone. The bell peppers, lime juice, and onions provide just that. This salsa topped off my cottage cheese for an easy and light lunch, and the next day I paired it with local grilled blackened dolphin. Chicken, pork, steak, black beans- no matter what you choose to eat with it, you’ll love the sweetness and tanginess of this!

Sweet Pepper Salsa

  • 2 yellow bell peppers

  • 1 red bell pepper

  • 1/2 cup purple onion

  • Juice of 2 key limes or 1 regular lime

  • 1/2 cup loosely packed, fresh cilantro

  • 2-3 garlic cloves

  • 1 tablespoon coconut oil

  • Pepper to taste

Roughly chop peppers and onion. Place all ingredients into a food processor and pulse until you achieve a chunky texture. Makes about 2 cups.
