Aleyah’s Shrimp Salad and Shrimp Melt Sandwich


Today, my guest blogger is my daughter, Aleyah. She enjoys being in the kitchen, and she loves seafood (especially sushi she says!). Last week, she made this shrimp salad all by herself (with just a little guidance from me). We had been to Whole Foods and picked up their canned shrimp since we had a coupon 🙂 The sweet, little shrimp were perfect for making this salad, and Aleyah was kind enough to share with her brother who is also a seafood lover.  Below is the recipe straight from the horse’s mouth:

Shrimp Salad

1 can of 365 shrimp (Whole Foods brand)

2 Tablespoons of plain Greek yogurt

1 Tablespoon of light mayo (also 365 brand)

1 teaspoon of lemon juice

1/4 cup of celery, finely chopped

1 teaspoon fresh thyme

A pinch of garlic powder

 Salt and pepper to taste

Drain the canned shrimp and chop very finely. Place yogurt and mayo in a bowl. Add lemon juice, garlic powder, thyme, and salt and pepper and stir. Then add in the celery and shrimp. Stir until it is all mixed together. I made my shrimp salad into a shrimp melt. First, I made the Shrimp Melt by putting Colby Jack cheese on the bread with Dill pickles and grilled it until golden brown.
