Avocado and Crab Salad – “A Salad For Each Week” #29


This is inspired by an appetizer that Scott and I enjoyed at Bobby Flay’s Bar Americain in NYC. Mine didn’t turn out to be an impressive, mile high tower quite like his, but it tasted rich and creamy nonetheless! And avocados are a powerhouse of nutrients supplying a large dose of pantothenic acid (energy and metabolism support), fiber, copper, folate, potassium, and vitamins K, B6, C and E.

Avocado and Crab Salad

2 large ripe avocados
1/2 lb crab meat, chopped
1 Tablespoon minced onion
1 handful of fresh cilantro, chopped
1-2 teaspoons garlic, minced
1/2 teaspoon paprika
Salt and pepper to taste

Juice of 1 lime
Hot sauce (optional)

Place garlic, paprika, salt and pepper into a large bowl. Put in sliced or chunked avocado and lime juice. Mash with a fork to desired consistency while also incorporating the seasonings. Add in crab, onion and cilantro and fold into the avocado. Serve in hollow avocado skin and garnish with cilantro.

BTW – The next day I used the rest of the crab in a frittata – sooooo yummy! Eggs, crab, milk, spinach, tomatoes, Italian seasoning and Parmesan cheese!
