Cheesy Cauliflower Bites

I made these on Sunday as a little experiment, and served them to all 3 kids with rave reviews! I am reheating the rest in the oven tonight to go along with our fresh catch of cobia and grilled chicken. I plan on serving them with marinara sauce as a dip. Pesto would pair well with these too!

Cheesy Cauliflower Bites

-1 Head Cauliflower
-1 Cup Whole grain of your choice (brown rice, quinoa, freekeh)
-2/3 Cup Mozzarella cheese, shredded
-1/2 Cup frozen spinach, thawed and drained
-1/4 Cup onion (sliced or roughly chopped)
-1 Tablespoon Ground flax seed
-1 Egg
-2 Garlic cloves, peeled and roughly chopped
-1/2 Teaspoon Salt
-1/4 teaspoon Pepper

Cut cauliflower from stalk and roughly chop. Place in a food processor and chop until crumb-like. Remove from food processor into a microwave-safe bowl. Cook for 5 minutes and drain well by placing cauliflower onto a kitchen towel and squeezing. Add spinach, onion, garlic, flax, egg, and S&P into processor and process until thoroughly mixed. Add in cauliflower, whole grains, and cheese. Pulse just until combined. Shape into 1.5-2″ balls and place on a foil-lined cookie sheet. Bake at 375 for 40-45 minutes. Serve warm. Makes about 12-15.
