“Cheesy” Kale Chips

If you are unfamiliar with nutritional yeast, it’s a powder or flake – yellowish in color- that is grown from beets and then dehydrated. Despite the word ‘yeast’, it contains no gluten, but is high in protein (18 amino acids) and B-12 (just 2 teaspoons gives you your RDA). The nutty/cheesy flavor lends itself to the perfect topping for a salad, pasta, popcorn, potatoes, or just about anything! I love it on my kale chips, eggs, and on my sauteed or roasted veggies. You can find it at your local health food store.

 
 Kale Chips

  • 4-5 large kale leaves

  • Olive oil

  • Garlic powder

  • Onion powder

  • Pepper

  • Nutritional Yeast

Wash and pat dry leaves. Tear kale into 2-3″ pieces and lay on a baking sheet in a single layer. Spray with olive oil and sprinkle with the seasonings. Bake in a preheated 350 degree oven for 10 min. Turn off oven and keep the kale in for another 10 min. Remove from oven and enjoy. If you do not finish all the kale chips, they can be crisped back up simply by placing them in a warm oven for about 3-4 min.

Sweet Potato Panzanella

  •   This past weekend, I made the herbed oil blend in this recipe and took freshly chopped veggies to our Saturday event at Lake Eola – Project Dance Orlando. It was a warm day, and so I knew hydration was important. Once I dipped the sweet potato slices into the oil and placed this wonderful combination into my mouth, I was immediately taken! While this dip is excellent with cukes or celery or tomatoes, it is by far truly made for sweet potatoes. Since sweet potatoes are high in carbs like bread, and by allowing this anti-oxidant-rich veggie to soak in the dressing, it reminded me of the classic Italian bread dish – panzanella. Who needs bread when you’ve got sweet potatoes?! Much tastier and much more nutritious and soooooo easy. Hope you enjoy it as much as I do!

Sweet Potato Panzanella

  • 4 cups peeled and sliced raw sweet potatoes

  • 1/4 cup white wine vinegar

  • 2 garlic cloves, minced

  • 1 teaspoon dried parsley

  • 1 teaspoon dried basil

  • 1 teaspoon dried oregano

  • 1 tablespoon fresh rosemary, finely chopped

  • 2 teaspoons nutritional yeast

  • 1/4 teaspoon sea salt

  • 1/8 teaspoon black pepper 

I like to cut my sweet potatoes into coin slices – about 1/4″ thick – and then quarter them. Place the sweet potatoes into a large bowl. Mix reminding ingredients in another bowl. Pour over the sweet potatoes, cover, and chill several hours to allow herbs to infuse and slightly soften the potatoes. Eat and savor!

The chief priests and our rulers handed him over to be sentenced to death, and they crucified him; but we had hoped that he was the one who was going to redeem Israel. And what is more, it is the third day since all this took place. In addition, some of our women amazed us. They went to the tomb early this morning but didn’t find his body. They came and told us that they had seen a vision of angels, who said he was alive. Then some of our companions went to the tomb and found it just as the women had said, but they did not see Jesus.” Luke 24:19-24

Day 5 Prophecy:

Psalm 22 is an incredible foretelling of Jesus’ death. King David was granted, by God, an insight into what was to come for the One that was promised to the people of Israel. The Jewish people were hoping for the Messiah to come and save them from Roman oppression, but Jesus came to suffer so He could save us from the oppression of sin and death. It’s Friday, but Sunday’s coming! 

My God, my God, why have you forsaken me?
    Why are you so far from saving me, from the words of my groaning?

Psalm 22:1

Fulfilled: 

“And about the ninth hour, Jesus cried out with a loud voice, saying, ‘Eli, Eli, lama sabachthani?’ That is, ‘My God, My God, why have You forsaken Me?’ ” Matt. 27:46

Just as we will experience in our own lives, Jesus was abandoned – even by those who loved Him.

7 Days of Fulfillment ~ Day 3

Jesus was betrayed by one of the disciples, Judas. This was a man Jesus chose at the beginning of His ministry, knowing that the end would result in a sellout for 30 pieces of silver. Jesus’ heart is one that is filled with compassion. He longs to see His children repent and run into His arms. So come to the foot of the cross for forgiveness, grace, and mercy.

 Then I said to them, “If it seems good to you, give me my wages; but if not, keep them.” And they weighed out as my wages thirty pieces of silver. Then the Lord said to me, “Throw it to the potter”—the lordly price at which I was priced by them. So I took the thirty pieces of silver and threw them into the house of the Lord, to the potter.

Zech. 11:12-13

 

Fulfilled:

And throwing down the pieces of silver into the temple, he departed, and he went and hanged himself. But the chief priests, taking the pieces of silver, said, “It is not lawful to put them into the treasury, since it is blood money.” So they took counsel and bought with them the potter’s field as a burial place for strangers. 7 Days of Fulfillment ~ Day 1

We often hear about the Old Testament prophecies being fulfilled in Jesus at Christmas time – those that center around His birth. But, there are many that are also fulfilled through His death. Beginning today, and throughout the rest of Passion Week, we will look at just how some of those Old Testament prophesies were indeed fulfilled completely in Christ.

Day 1 Prophecy:

“And I (God) will put enmity between you (Satan) and the woman, and between your seed and her Seed (Jesus) ; He will bruise your head, and you shall bruise His heel” (Gen. 3:15).

Fulfilled: “ ‘Now is the judgment of this world. Now shall the prince of this world (Satan) be cast out. And if I (Jesus) be lifted up from the earth, I will draw all to Myself.’ But He said this to signify by what death He was about to die” (John 12:31-33).

Mocha Smoothie Bowl (Like having ice cream for breakfast!)

I’m moving my morning smoothie from the glass to the bowl! And since I use frozen banana, this has a thick and creamy texture similar to ice cream. You can top your smoothie bowl with your favorite toppings, sit a spell, and indulge while knowing you’re feeding your body so many good things!

Mocha Smoothie Bowl

  • 1 frozen banana

  • 4 oz coffee (or water if you don’t want the coffee flavor)

  • 2 teaspoons cacao powder

  • 1 tablespoon hemp protein powder

  • Dash almond extract

  • Dash of cinnamon

  • Toppings of your choice (I used strawberries and chopped cashews)

Place all ingredients (except toppings) into a blender, and mix on high until banana is completely blended. Pour into a bowl, garnish with toppings, and enjoy!

Vanilla Extract ~ Homemade and Easy

 I make my own vanilla extract because it’s just 2 ingredients: vanilla beans and vodka. In the picture above, my new batch is the one on the left. My “almost-all-gone” batch is on the right. All that it takes is some time, but it’s worth it. The extract I started this morning will darken to match my old one in about a month. I buy my whole vanilla beans on Amazon and, as a youth pastor’s wife, I discreetly bought some vodka at Sam’s 🙂 The good news is that the one bottle of vodka will last through a few batches.

Homemade Vanilla Extract

  • 10 whole vanilla beans

  • 1 1/2 cups vodka

Place vodka in a mason jar. Slice each bean lengthwise just to slightly open the bean so the flavor can release. Place beans into vodka and fold if necessary to immerse as much as possible. Place lid on top and seal securely. Shake once a week until it is darkened in color. I leave the beans in until I completely use the extract up.
