Drop Off, Dash Off!

The start of school means I get the opportunity to run again with my son, Joel. After I drop off Aleyah at school on Mondays and Wednesdays (when Daddy takes Anna to preschool), I park the car, unload the jogging stroller, strap in the boy, and dash off on our 2-3 mile run! We really enjoy our runs together, and I must say this was one of the main things I looked forward to as the new school year began. If I were a poet, I would write a sonnet to my jogging stroller.  🙂

My philosophy when it comes to exercising is ‘Do what you can, when you can.’ My marathon training requires 6 mile runs on some mornings. I have found that it sometimes works best for the family if I do 3 miles before they rise, and finish it with Joel when the girls are in school. So find a slot of time in your schedule, and get moving! It may take a bit of planning, but you won’t regret it and will feel better for doing it.

If you are looking for a great jogging stroller, this Expedition stroller has seen many, many miles over the last 6+ years! I have never had any problems with it, and it still has a lot of life left in it. When looking for a jogging stroller, remember that the front wheel does NOT turn. If you find a 3-wheeled stroller that has a movable front wheel, it is not for running. Take a look down the aisle and find the right one.

Lunch Box Hero

We started school here on the Space Coast almost 2 weeks ago. I know that over the next couple of weeks, all schools will be back in session and, as everyone is beginning to head back to class, I wanted to spend the week focusing on some healthy tips to get the year started off right.

LUNCH BOX HERO

So, are you a lunch box hero? Or are you a lunch box villain? While the standard PB&J is a great stand-by for our kids’ lunchboxes, mixing things up makes for an exciting lunchtime.  They anxiously open their superhero or princess lunchbox, wondering what Mommy has packed them for the day. Here are a few ideas that I like to use…

Mediterranean Pasta Salad – Finely dice red peppers, onion, and fresh spinach. Mix them with feta, sliced black olives, and small whole grain pasta. Toss with a bit of Greek vinegarrette.

Greek Chicken Salad – pack some walnuts separately to add to the salad and serve with pita bread triangles

French Cafe -An open-faced ham,  cheese (reduced-fat), spinach, and tomato sandwich on whole grain baguette and a  fresh fruit yogurt parfait

PB & A Roll Up – Spread peanut butter on a whole grain wrap and place on apple slices, raisins, and drizzle with honey. Roll up and cut in half.

Tuna with Cucumber and Red Pepper Relish – mix 1 can drained, water-packed tuna with 1/3 cup of the relish and scoop up with brown rice chips

Cucumber and Red Pepper Relish

  • 1 cucumber, finely diced
  • 1 large read pepper, finely diced
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon olive oil
  • 1 tablespoon rice wine vinegar
  • salt and pepper to taste

Add all ingredients together and cover and chill.

Crudite S’il Vous Plait

It’s almost dinner time, the kids are doing homework, and everyone is a little grouchy. A crudite tray is my solution to this problem. I always try to keep fresh fruit and veggies sliced so I can place them out as dinner times approaches. My kids know that they are allowed to come to the table and munch away as I finish up dinner. This keeps them from whining before dinner, and it also fills them up on a variety of fruits and veggies so we are not battling over eating them during dinner. I am sometimes asked how I get my kids to eat vegetables. This is one of the best solutions I have!

Financially Fit

I’ve taken a bit of a break from my blog this week because I had some projects I had to tackle. Between changing banks, changing insurance, and just basic financial re-evaluation, I have been busy tackling money issues. I also have taken the opportunity to earn a few extra dollars (including selling my sweet hummus!). These chances must be taken advantage of when your husband has a youth pastor’s salary. 🙂 Getting all of my “bucks” in a row helps me to feel more at ease and focused. On top of this, I have been busy working on a special post for a big fundraiser for Aleyah’s school, and I will have completed 21 miles of running in four days by 8:30 this morning.

I am thankful that my husband has chosen to celebrate his 40th birthday (on the 28th) by heading to Orlando for a 2-night getaway. We will leave later today and enjoy some much-needed R&R.

I can’t wait to get back to sharing on my blog, and next week I am focusing on back-to-school ideas as everyone is settling into or starting the new school year!

Marathon Training – End of Week 3

Today marks the end of our third week for training for the Space Coast Marathon that will take place the Sunday after Thanksgiving. I am happy to say that I have been able to pretty much stick with the training schedule. I’ve missed a couple of days, and had to rearrange some days, but that is to be expected when you have 3 young children, the start of a new school year, and a temperamental fridge that has cost several hours of work!

We chose to follow the intermediate plan of Hal Higdon. Here is the 18-week plan:

Too Much Tzatziki? Try This!

Whenever I make tzatziki sauce, I purposely make more than I need. I use the leftover sauce to make a Greek chicken salad!

I mix chopped chicken with celery, onion, and raisins, and then I stir in enough tzatziki sauce to make it creamy. I love to place a scoop of this on top of a bed of spinach and drizzle just a bit of Greek dressing on top. Serve with warm pita wedges- yummy!
