I was able to crack open my Shape magazine the other day and tried out this new 20 minute toning workout designed by The Biggest Loser’s Bob Harper. I loved it!

Super Bowl Favorites Revamped

Tonight we had a Pre-Super Bowl meal. I tried out a new recipe I found in Winn Dixie’s Organic booklet- Spinach and Artickoke Dip and served it with grilled pita. Even my kids ate this one up! I also decided to ditch the wings and go with a healthier and lighter option- grilled buffalo chicken strips with bleu cheese crumbles. They were moist and the bleu cheese melted just enough so it was creamy and spreadable. I hope you give these recipes a try and enjoy them as much as we did!

 

 

Grilled Buffalo Chicken Strips with Bleu Cheese Crumbles

1 40 oz. pkg. Frozen Chicken Tenderloins, defrosted
1 Tablespoon Sea Salt
1 Tablespoon Honey
Buffalo wing sauce (Watch the ingredients in the sauce- no hydrogenated fats, corn syrup, or chemicals please)
Bleu cheese, crumbled

First, brine the chicken. Put honey and salt in a large bowl. Add a little water and stir. Next, place the tenderloins in the bowl and continue filling with water until chicken is just covered. Let stand for at least an hour and up to several hours. This helps keep the meat moist while cooking.
Place buffalo sauce in a large bowl. Remove chicken from brine and place in the bowl of sauce. Stir to coat each strip. Place tenderloins carefully on grill over medium heat. Grill for about 4-5 minutes per side or until no longer pink in the middle. Place on serving tray and top with crumbled bleu cheese. Serve with celery and carrots of course!

“Cardio +” on a FL Winter Day

I’m not sure if today should be called a winter day. It’s beautiful outside so I took advantage of it , and Joel and I went for a run after dropping the girls off at school. This run was a cardio + session… plus a 21 lb baby in a jogging stroller and plus the Melbourne Causeway. We also will be heading to Grandma’s and Grandpa’s house this afternoon, and we have a walk planned to visit the horses in the neighborhood. I hope that those of you who are not piled under snow will have a chance to get out and enjoy the weather today. There is nothing as inspiring as a gorgeous day!

Hummus- Yummus!

We are swimming in hummus here! We love it, but I was wanting some new ideas on how else to utilize this great spread. I had my girls spread some on the mini peppers that I bought the other day. So…post a comment and let everyone know what you like to do with hummus!

Rest for the Weary

This week has been a bit crazy. Both my girls had a 48 hour head cold, my husband has had it for five days, and he had the added responsibility of preaching today. These “events” have thrown many things askew. Today I have been quite tired. While my mind was telling me to go for a run, I heard my body loud and clear, so I rested today- no run, no weights, no workout of any kind. I even to a break from cooking! For dinner, I grabbed my frozen meatballs, threw them in a pot, and put together some meatball subs- minimal assembly and minimal mess! Anna helped pulled out the grapes, blueberries, peppers, and cherry tomatoes, and voila!- dinner was served. I am looking forward to a good night’s rest and some normalcy (whatever that means!) for the upcoming week .

Good Luck at a Pot Luck!

While I love the fellowship aspect of a pot luck, I dread the choices presented on the food table, and not just for myself and my family, but for all who attend. The best way to combat this is to bring a healthy dish yourself. Today, my church is having a pot luck after service, so I am bringing a salad. I am tossing together some chopped artichokes, sundried tomatoes, and white beans and serving them on a bed of spinach with balsamic vinegar and olive oil. While my girls do like spinach salad, I am making them a special yogurt parfait so they have something a little extra special, and they don’t feel like they are missing out. While I know the vast majority of people will choose to eat potato salad over a spinach salad, I feel like I am maybe giving someone the opportunity to make a delicious and healthy choice. I also used Hodgson Mill’s gingerbread mix to make some mini gingerbread muffins. (Scott loves these so much that I did buy the box of 6 packages off Amazon! Sometimes you can find it at Publix.) I then simply melted some dark chocolate and dipped the tops of the muffins into the chocolate- a treat that is tasty and won’t throw you off course!

Body For Life

In 2000, my friend Kim told me about a book titled Body for Life. It is a 12-week nutrition and exercise program, and after reading it, I knew it was a plan I could follow. I lost 10 pounds in that 12 week period. To this day, I still follow some key points from the book.
*I eat small meals every 2-3 hours.
Each mini-meal includes protein and complex carbs, and I add vegetables to at least three of these meals.  This keeps my metabolism going, and it keeps me from being famished and then overeating.
*I incorporate speed work into my running. I maintain a steady pace, and then sprint at different points in my run. Speed intervals increase your endurance and speed.
*I weight train. While I no longer follow the exact weight training plan, I make it a regular part of my workout routine. Muscle burns calories, so the more muscle mass you have, the more calories you burn, even at rest.

P90X This AM

Today was my P90X morning. This program was designed by Tony Horton. He has a whole P90X set which consists of 12 DVDs, a nutritional plan, a fitness guide, and additional items. If you feel you need all this to get you motivated to reach your goals- go for it! If you want to give it a test drive, purchase the Cardio DVD which is a mix of yoga, kenpo (boxing), and plyometrics (lots of intense jumping!). I bought this DVD on ebay along with the Kenpo and the Plyometrics all for around $25. It has been a great alternative to varying my workouts, and it also has been a good option during cold days!
