Chewy Date Bars with Brown Rice Protein- My new Favorite Find!

I found this recipe for these chewy date bars in my recent issue of KIWI magazine (get it when another deal becomes available!). It called for brown rice protein powder, so I picked some up at my GNC. It was $14 for 1.1 lbs so I figured I’d give it a try. These bars are delicious and have been Aleyah’s afternoon school snack this past week. I might add some mini chocolate chips in them next time. You can definitely double the batch and freeze them individually so they are a quick, handy snack. Sorry that I don’t have a picture of them- the magazine doesn’t put their published recipes on their website, and we ate them all before I remembered to take one!

Chewy Date Protein Bars

  • 1 Cup almonds
  • 1 cup chopped dates, packed
  • 1 cup chopped apricots, packed
  • ½ teaspoon sea salt
  • ½ teaspoon vanilla extract
  • ½ teaspoon almond extract
  • ¼ cup plain brown rice protein powder
  • 1 Tablespoon water

In a food processor, pulse almonds until finely chopped. Add the dates, apricots, salt, vanilla, and almond extracts. Process until well combined. Add protein powder and water, and process again until blended. Scoop ¼ cup of mixture at a time and use your hands to shape each portion into a smaller bar. Place the bars on a plate, and refrigerate for at least 1 hour before serving. The bars will keep in the fridge in a covered container for up to one week.

Per bar: 164 calories, 7g fat, 6g protein, 25g carbs (4g fiber)

Scott and I are both now using the brown rice protein powder daily. I bought Jarrow Brown Rice Protein Concentrate, Vanilla. It is vegan, made from non-GMO rice, and has no artificial ingredients/flavors (as so many protein powders do). With my marathon training, I am having to do one protein shake a day, and I was happy to find this as I am having to supplement my diet. Here are the nutritional facts:

Cocoa Banana PB Shake

  • 1 frozen banana
  • 1 cup almond milk
  • 2 T brown rice protein
  • 1 large tablespoon of peanut butter
  • 2 teaspoons unsweetened cocoa powder
  • 1 teaspoon honey

Blend and enjoy this dessert-like treat!

Product Review – Mandoline- A Kitchen Must-have!

I just finished prepping some things for dinner, and I used one of my most trusted and efficient kitchen tools – my mandoline. The mandoline is useful in quickly slicing fruits and veggies, grating cheeses, and making decorative cuts. Tonight we are having a cool zucchini, carrot, and radish salad (will post recipe tomorrow) that requires thin slices of each of these summertime vegetables. Rather than spending 15-20 minutes slicing with a knife, I was able to get everything cut within 5 minutes! Mine happenes to be a Pampered Chef item, but you can find them anywhere. Just remember to use the hand guard!

July – National Ice Cream Month!

I have to admit that I am not a big ice cream fan- except when it comes to mint chocolate chip! Recently, I purchased Stonyfield’s Organic Low-Fat Minty Chocolate Chip Frozen Yogurt. This little carton of bliss contains just 140 calories per 1/2 cup serving and has the same live active cultures as their yogurts. I love this little treat with its chunky, chocolate chips and minty taste! It satisfies my occasional sweet tooth, and it is a dessert that I can feel good about giving to my kids. They do also offer non-fat flavors and premium ice creams too. Look on their website for a coupon as well.

My Small Business

My oldest, Aleyah, recently asked me what I do with the money that I make from my hummus. I was happy to report that the money I earn from my sales goes towards paying for her and her sister’s ballet tuition. According to the 3/50 Project, for every $100 spent in locally-owned business, $68 returns to the community! The good news here is that 100% of my profits go back into my community as I pay Space Coast Ballet for lessons for my two ballerinas. I love selling my sweet hummus because it promotes whole and clean eating, it provides me with the means to allow my girls to dance, and I know that I am giving back to my community!

Product Review- Store-bought Salad Dressings

While I would love to make everything from scratch, there is just not enough time in the day! One of the store-bought items that I purchase on a regular basis is salad dressings. I avoid going down the aisles, so I buy the dressings that are refrigerated in the produce section. My go-tos include the Bolthouse brand along with Marie’s dressings. These two brands offer yogurt-based creamydressings as well as vinaigrettes. Because they contain no preservatives, they require refrigeration and do not have a long shelf life. Just another incentive to add more salads to your daily diet! There is no high fructose corn syrup in them like you would find in those sitting on one of the center aisles. I have introduced a number of people to these dressings, and each person has given them rave reviews!

Product Review- Misto Olive Oil Sprayer

I LOVE my Misto olive oil sprayer! This can requires some pumping action to spray, but it is a lot cheaper and healthier than the Pam-like cooking spray. Just pour in the oil, give it 3-4 pumps, and it will spray a cooking pan well. You may have to do two sets of pumps if you are spraying multiple pans. This is a perfect way to add just a touch of olive oil to salads, meats, and other foods rather than too much oil pouring out from the olive oil bottle. It is definitely worth the investment!
