Financially Fit
I’ve taken a bit of a break from my blog this week because I had some projects I had to tackle. Between changing banks, changing insurance, and just basic financial re-evaluation, I have been busy tackling money issues. I also have taken the opportunity to earn a few extra dollars (including selling my sweet hummus!). These chances must be taken advantage of when your husband has a youth pastor’s salary. 🙂 Getting all of my “bucks” in a row helps me to feel more at ease and focused. On top of this, I have been busy working on a special post for a big fundraiser for Aleyah’s school, and I will have completed 21 miles of running in four days by 8:30 this morning.
I am thankful that my husband has chosen to celebrate his 40th birthday (on the 28th) by heading to Orlando for a 2-night getaway. We will leave later today and enjoy some much-needed R&R.
I can’t wait to get back to sharing on my blog, and next week I am focusing on back-to-school ideas as everyone is settling into or starting the new school year!

Marathon Training – End of Week 3
Today marks the end of our third week for training for the Space Coast Marathon that will take place the Sunday after Thanksgiving. I am happy to say that I have been able to pretty much stick with the training schedule. I’ve missed a couple of days, and had to rearrange some days, but that is to be expected when you have 3 young children, the start of a new school year, and a temperamental fridge that has cost several hours of work!
We chose to follow the intermediate plan of Hal Higdon. Here is the 18-week plan:

Parfait Perfection
We are in Orlando today for a one last “hurrah” before school starts next week. We made a stop at one of our favorite places- First Watch. The girls ordered the parfaits which are made with organic yogurt, granola, and fresh fruit. As you can see, they are quite large! This restaurant has great healthy entrees and we always have a wonderful meal!

Opa! Greek Pesto
My little guy turns 2 on Friday. While I am still trying to wrap my mind around the fact that he is no longer a baby, I am busy planning his birthday dinner. We are keeping the celebration quaint this year with just grandparents and aunts and uncles. Joel is very into all foods Greek, so hence the menu of grilled Greek chicken and a layered Greek salad.
In my herb garden, my oregano was overtaken by the basil, so I needed to use it before it vanished completely. Yesterday I took three distinct Greek herbs: oregano, mint, and parsley. I used Ina Garten’s pesto recipe, and simply replaced the basil with equal parts of these three herbs. I had to test taste it of course, and then I had to quickly place it into the freezer for safe keeping! I will be pouring the pesto on top of the chicken just as it comes off the grill. Oh, I can’t wait!! And I will be posting my recipe for the layered Greek salad next week after our celebration for Joel’s second birthday. (sniffle, sniffle)

July – National Ice Cream Month!
I have to admit that I am not a big ice cream fan- except when it comes to mint chocolate chip! Recently, I purchased Stonyfield’s Organic Low-Fat Minty Chocolate Chip Frozen Yogurt. This little carton of bliss contains just 140 calories per 1/2 cup serving and has the same live active cultures as their yogurts. I love this little treat with its chunky, chocolate chips and minty taste! It satisfies my occasional sweet tooth, and it is a dessert that I can feel good about giving to my kids. They do also offer non-fat flavors and premium ice creams too. Look on their website for a coupon as well.

Whole Foods Field Trip #2!
We are heading back to Orlando on Saturday, July 23rd for another round of lunch and shopping! We will leave around 10:00 and have lunch at Season 52, and then we will be heading down the street to Whole Foods to do some shopping, along with visiting any other places with deem necessary! If you want to come, let me know. We had a great time on our last trip, and I am looking forward to it again!

Mother’s Day Revisited
Today I am going to use my Mother’s Day Sports Authority gift card to buy a BOSU ball. Meaning “both sides utilized”, this piece of exercise equipment is designed to work your core through stability and balance. My husband has been using one at the gym for a couple of months now and swears by it. So I will be joining the bandwagon as I pick up one for myself today. There are many websites that offer BOSU ball exercises and whole workouts and DVDs. I am looking forward to beginning this new balancing act!

Summer Book Club!
I am excited about beginning a summer book club! If you would like to join us, we will be reading Having a Mary Heart in a Martha World. This book is about the “busyness” that we, as women, face and finding a balance between resting in God and serving. We will be meeting every other Monday evening beginning June 13th, and will be discussing 2-3 chapters each meeting. Please let me know if you are interested in meeting with us. The book can be purchased online for around $12 or $13, or we can order a pack together to save a few bucks. I hope you will join us! If you live in another part of the country, I challenge you to join a book club or Bible study this summer when our schedules are not so hairy and we have a little extra time to relax.
