The Cradle and the Cross

Christ Jesus, who, though he was in the form of God, did not count equality with God a thing to be grasped, but emptied himself, by taking the form of a servant, being born in the likeness of men. And being found in human form, he humbled himself by becoming obedient to the point of death, even death on a cross. Therefore God has highly exalted him and bestowed on him the name that is above every name, so that at the name of Jesus every knee should bow, in heaven and on earth and under the earth, and every tongue confess that Jesus Christ is Lord, to the glory of God the Father.

Jesus came to this earth bloodied,  naked and crying. And He left this earth bloodied, naked and crying. Both his birth and his death were sacrifices.
The sacrifice He made to come to earth meant that he left His home in Heaven to become a helpless and dependent baby only to grow up and face all the challenges we, as humans, encounter today. The purpose? To be a servant while he walked on earth and, in the ultimate act of sacrifice, to die a death that He didn’t deserve- A death that was meant for sinners like me and for you.
So, as we celebrate his birth, let us never overlook the purpose of this miraculous event- a blameless life that led to the cross in order to defeat the sting of death so we may have fellowship with our Creator. Praise be to God for He has done great things!
 
I love the song, “Carry Your Name”. Take a moment to listen and watch. The words to the chorus (below) are simply stated, but oh so true! It reminds me of the extravagant love God has for each and everyone of us and that we, as believers, carry His name.

A Birthday Wish

This week I turn 34. I’m not much of a birthday person- never have been. My mom says I cried when they sang “Happy Birthday” to me on my very first birthday. I think its because I’m a “behind the scenes” kind of girl and being center stage is far from my favorite place to be. I can take or leave presents. They’re nice to get but it’s not my love language. I’m simply content with the well-wishes extended to me and a nice dinner with my family.

But this year, I am asking for something. I would love for my readers to devote 34 minutes of their time this week to being fit and healthy.

You can take that 34 minutes and  work up a good sweat, or use that time to make a clean and whole meal with or for your family. Or divide those moments up and do both. Knowing that others are doing what they can to take care of their bodies would be a wonderful gift to me! If you choose to “gift” me (and yourself!) 34 minutes of your time, please leave a comment below and share what you did!

A Break from the Busyness

20121215-145157.jpg Between my article on the front of last Sunday’s newspaper and the Christmas season, I’ve been busy making hummus, networking, bookkeeping, figuring out the wisest ways to grow my business, as well as going on a field trip and participating in the kids’ Christmas activities at school. So today we are breaking away from the rush and spending some time with Pop Pop and Mimi as we enjoy the last use of our Sea World passes. Tomorrow, after church, I will be in the kitchen again as I prepare the next batch of sweet hummus for another Downtown Produce delivery. Catch me there on Friday and Saturday (11 AM – 3 PM) as I am handing out samples for those of you who are anxious to try it!

Wintery Shepherd’s Pie with Sweet Potatoes

My family loves Shepherd’s pie! I “reinvented” it in order to satisfy my “sweet potato” tooth. I love the mushrooms and rosemary in this- it gives it an earthy and warm taste!

  • 1 lb ground lean turkey

  • 2 large carrots, diced

  • 1 large celery stalk, diced

  • 1/2 onion, minced

  • 8 oz mushrooms, sliced

  • 2 garlic cloves, minced

  • 2 tablespoons fresh rosemary leaves

  • 1/3 cup beef broth

  • 1 Tablespoon tomato paste

  • salt and pepper to taste

  • 2 lbs sweet potatoes

  • 1 teaspoon garlic powder

  • 1/4 plain yogurt or low-fat sour cream

  • 1 tablespoon Earth Balance butter spread

  • dash of salt, pepper

  • Freshly grated Parmesan cheese

Cook sweet potatoes in microwave or oven. You can peel them or leave the skins on- your choice! Allow to cool some. Mash in a medium bowl with garlic powder, yogurt or sour cream, Earth Balance butter and salt and pepper. Set aside.

Brown turkey in pan over medium heat. Remove and saute carrots, celery, onion, mushrooms, and garlic in the same pan for 5-7 minutes. Toss turkey back into pan and add tomato paste, broth, salt and pepper, and  fresh rosemary. Mix and pour into a 9×13″ pan. Top with sweet potato mixture and then grate Parmesan cheese over the top. Bake at 350 for about 20 minutes. Turn on broiler for 3-4 minutes if cheese is not browned to your liking when cooking times ends.
