135/85 = 2x

It may be back to school time, but this is NOT a math equation. This (135/85) is the blood pressure of a teenage girl that we were standing next to at the pediatrician’s office. This makes her 2x more likely to have a heart attack or stroke as someone with a reading of 115/75. I saw the responses of the two nurses standing there, and they were not pleased. This young lady was a bit overweight but nothing out of the ordinary for today’s youth (which is quite sad that this is the new “norm”).
Nutrition and exercise. These are key to our health. That is why I make sure my family eats well and exercises. Mondays are our highly active days. The girls have ballet and Joel now participates in Lil’ sports. Monday night’s meal must be healthy and nutrient-rich to refuel their growing bodies. It’s almost also our “slow cooker” night. This way we are not rushed to just grab something which usually results in a less than ideal supper. Here are some our favorite crock pot meals:

Sweet Potato Chips and Guac

Truth be told, my husband and kids do not care much for sweet potatoes. However, when I gave them sweet potato “chips” (which is peeled and sliced raw sweet potato) to dip into homemade guacamole, they love the combination! The sweet potato slices are great dippers because they are just slightly sweet without an overpowering flavor, and  they also have a bit of a crunch like a chip.
So for an afternoon snack today, peel a sweet potato, slice it up, and take the guacamole plunge!

I Break For Hummus!

This week I will be tackling many details of my new venture- starting my hummus business! I received my state license last week for selling my sweet hummus to local area stores. I am focusing on all the ins-and-outs of getting a small business up and running. Because it involves a lot more than I bargained for, I am taking a blogging break for the week so I can have all my “ducks in a row” for my October 1st goal of having products in at least two local spots. So please pray for wisdom and discernment for me as I pursue this. I am excited about what the future holds, but also do not want it to take over my time with my family and ministry. It will be interesting to see what God has in store for me. I never would’ve thought this could be, and am thankful for the opportunity to make and promote a product that is both delicious and healthy! So here I go…

Snack Break With Store-bought Snack Bars

I would love to send my kids to school everyday with a healthy, homemade snack. But reality is, there are not enough hours in the day to make everything from scratch. Here are three of our favorite grab-and-go bars when we need a little help from our friends…

Kashi’s Chocolate Soft Baked Squares – These are one of Aleyah’s new favorites. She gets a kick out of the fact that sweet potatoes and black beans are baked right in with the chocolate! They also come in almond flavor.

Nature’s Path Chococonut Granola Bars – We also like the NP’s Pumpkin-N-Spice Granola Bars, but the combo of chocolate and coconut in the Chococonut is preferred by our family. These are a little more on the dessert , but they are a nice organic and wheat-free treat on the occasion we need them.

Clif Kid ZBarThese kid-sized bars create shrills of excitement when I place a box into the grocery cart. The oat-based bars come in a variety of flavors including S’mores, Iced Oatmeal, and Peanut Butter to name a few.

Backpacks and Breakfasts

It is back to school here and in many other places around the country as well. That means hectic mornings, and that means quick breakfasts. We are a breakfast-eating family here in the Terry household! No one has to be forced to eat to start off the day. When the kids ask for breakfast, I have one goal in mind- mixology. My idea of mixology entails combining lean protein and complex carbs. The choices the kids have will always include both of these two vital food components. Typical choices at our table include:

  • Cereal- A high protein/high caloric cereal with a low caloric cereal- Some favorite mixings include Kashi’s Go Lean Crunch cereals with their Honey Sunshine or Kashi’s Cinnamon Harvest with their Heart to Heart Honey Toasted Oats. I like Kashi because they offer more than just wheat in their cereals- they also include other whole grains.
  • Eggs or uncured sausage with organic grits or some type of whole grain toast/bagel/etc
  • Cinnamon Raisin bread (We use Udi’s Gluten Free) with reduced fat cream cheese
  • Whole grain crackers with 2% cheese
  • Oatmeal with cinnamon, honey, dried fruit, and crushed nuts
  • Smoothies (milk, fruit, yogurt or brown rice protein powder) Chocolate Peanut Butter and Mango Pineapple are two of our favorites

Kids in School, Date with Husband

Today was the first time in 7 years that all the children in our household were in school. Joel went to preschool for the first time, Anna entered kindergarten, and Aleyah, the pro, started her second grade year. So what’s a mom to do with a little extra time? Date my husband! After Scott and I walked Joel into his class and took the necessary pictures, we hit the beach for a soft sand run. Inspired by the physiques of the Olympic beach volleyball players, we set off on a 30 minute run through the dry, loose sand. It was a tough workout but a welcomed changes from the ordinary plodding of the pavement. And when my ultra-competitive husband states, “It’s all about completing the run,” what he really means is “Slow down Michele because you’re kicking my butt!”. 🙂 Nonetheless, he survived and we enjoyed our time together and plan on making it a weekly ritual. But the alone time was short-lived as I rushed to the store, celebrated Joel’s birthday in his class, picked up Anna, made hummus, picked up Aleyah, spent 2 hours at ballet, and drove off to church for an hour and a half before heading home and tucking in over-tired kids. All the more reason to treasure the moments that Scott and I have together!

Each of these plates contain about 260 calories each. Which one would you rather fuel your body with?

Marinated Mushrooms

I served these at Joel’s 3rd birthday party on Sunday. They were a great accompaniment to the blackened halibut and grilled chicken. I mixed the leftover mushrooms with grilled zucchini and placed them over 2% cottage cheese for a mid-morning snack yesterday.

Marinated Mushrooms

  • 16 oz whole mushrooms, wiped clean

  • 1/3 cup extra virgin olive oil

  • 1/4 cup lemon juice

  • 1 tablespoon balsamic vinegar

  • dash of Worcestershire sauce

  • 2 tablespoons fresh oregano, chopped

  • 2 garlic cloves, minced

  • salt and pepper to taste

Combine all ingredients except the mushrooms into a medium bowl. Whisk to combine. Add in mushrooms and gently stir to coat. Place in fridge for at least one hour and overnight if possible. Serve chilled or at room temp.  You can add crushed red pepper flakes if desired.

A Friend, Not a Statistic

Statistically speaking, there are approximately 400,000 deaths each year in America due to obesity. That’s about 2000 people daily that die too soon and are robbed of enjoying life to its fullest. This number is sometimes hard to grasp until it hits close to home. Tonight we will say goodbye to our friend, Ron. Last month, Ron entered the hospital with various complications mainly due to obesity, and he lost the battle this past Friday night. But he is not a statistic to us. He was a friend, a loyal youth worker, and a dedicated church member that would serve anytime, in any way. He was on the road to lose that weight- working out, beginning to change his diet, and even trying out for The Biggest Loser. But this epidemic got him before he could conquer it.

During both Bible Study and church service yesterday, God reminded me of how He is a God that is all-inclusive.  The God of Abraham, Issac, and Jacob is the God that extends the invitation for salvation to each and every person who has and will be born on Earth. The God who chose the Jews to be His people, is the God who chose to use Rahab, a pagan prostitute and Ruth, a Moabitess, to bring forth the Messiah, Jesus. They recognized that God was who He said He was, and they chose to worship and follow Him. God never desires anyone to be without Him. He purposely ensured that everyone had a way to Him and His kingdom- through the blood of His son, Jesus. Jesus proclaimed that He is the way, the truth, and the life, and that no one comes to the Father but through him. (John 14:6) I often hear nonbelievers say that this “one and only way” thinking is narrow-minded. I beg to differ. There is no linear thinking or selfishness in sacrificing one’s life (as Jesus did) or sending your only son to the cross (as God the Father did) in order to pave the path to eternal life for each and every person who has rejected you (as we all have rejected God).

I know that our Hawaiian friend, Ron, is glorifying Jesus in Heaven at this moment and for every moment from here on out. He would want nothing more than for you to know the One who saved him.

The Lord is not slow to fulfill his promise as some count slowness, but is patient toward you, not wishing that any should perish, but that all should reach repentance. 2 Peter 3:9
