Orange is the New Black
Carbohydrates don’t just come in shades of white and tan (i.e. bread, rice, cereal). The best carbs come from vibrant colors like orange! For instance, a 1-cup serving of sweet potato contains 27 g and 10 g of carbs are in a 1-cup serving of orange peppers. Here is why you need to switch from your pasta to a serving of orange vegetables: the orange fruits and vegetables contain four vital vitamins and minerals.
Beta-carotene – Associated with a decreased risk for certain diseases, including cardiovascular disease and certain types of cancer. Beta-carotene also plays a role in regulating the growth and reproduction of cells within the body.
Vitamin C – Vital for the immune system to function properly and is important in collagen formation.
Potassium – Aides in muscle contraction, nerve function and pH regulation and has shown to lower blood pressure
Vitamin E – (in veggies only- not orange fruits) May help protect against chronic diseases such as cancer and cardiovascular disease
The amount contained in one cup of each orange vegetable is as follows: butternut squash, 2.6 mg; sweet potato, 1.4 mg; pumpkin, 2 mg; and carrots, 1.6 mg

Oh My Oreo!
Oreos are as addictive as cocaine and morphine. So that means I am not a “mean mommy” after all for keeping them from my kids! 🙂

Dear Summer,
Dear Summer,
Your warm and carefree days rolled in at the end of May, and have all too soon disappeared. But I want to thank you for allowing me the precious time with my children. We may not have traveled far, enrolled in a countless camps, or spent extra time practicing math facts. However, the kids stayed in their jammies until lunch on some days, they created some (ok- a lot of!) pretty cool Lego structures, and battled one another with Star Wars figures and ships. We played countless games of Uno and Skip Bo, took many trips to the library, and spent time with family and friends. We are not promised tomorrow, so I am grateful that we took advantage of the yesterdays! I have no regrets from the past three months- just wonderful and treasured memories!

Salad Bowl Shake Up
To go along with my weekly salad ideas, including yesterday’s Broccoli and White Bean Salad, I came across this “Savvy Salad Ideas for Summer” post from the nutritional blog by the Mayo Clinic. It “breaks down” a salad into different components and makes suggestions on how to incorporate each of the following groups: Leafy greens, Carbohydrates and whole grains, Proteins,Vegetables and fruits, Herbs and spices, and extras.
Your salad bowl is a blank canvas! Use these ideas to create a lunch or dinner that satisfies your hunger AND cravings!

Cost of Food – Unhealthy Vs Healthy Food
There are no excuses for poor food choices, just poor planning. Eating nutrient-rich foods doesn’t have to break the bank, but you do need to have a plan in place in order to make healthy meals, prepare snacks to have on hand, and make the best choices in the grocery aisles. Take the extra time and effort to plan ahead now that you can see from the above image that the high cost of healthy foods is no longer an acceptable reason for not eating right.

A Bright Reminder for Kids (Young and Old!)
Tonight at church, I was able to cook and create dinner with our kids for our summer Wednesday night activity. After making and thoroughly enjoying a healthful meal, I passed out these IKEA utensils to each child. These are to serve as a reminder that our plates should be colorful – full of the rich and bright spectrum of fruits and veggies that God created!
