Backpacks and Breakfasts

It is back to school here and in many other places around the country as well. That means hectic mornings, and that means quick breakfasts. We are a breakfast-eating family here in the Terry household! No one has to be forced to eat to start off the day. When the kids ask for breakfast, I have one goal in mind- mixology. My idea of mixology entails combining lean protein and complex carbs. The choices the kids have will always include both of these two vital food components. Typical choices at our table include:

  • Cereal- A high protein/high caloric cereal with a low caloric cereal- Some favorite mixings include Kashi’s Go Lean Crunch cereals with their Honey Sunshine or Kashi’s Cinnamon Harvest with their Heart to Heart Honey Toasted Oats. I like Kashi because they offer more than just wheat in their cereals- they also include other whole grains.
  • Eggs or uncured sausage with organic grits or some type of whole grain toast/bagel/etc
  • Cinnamon Raisin bread (We use Udi’s Gluten Free) with reduced fat cream cheese
  • Whole grain crackers with 2% cheese
  • Oatmeal with cinnamon, honey, dried fruit, and crushed nuts
  • Smoothies (milk, fruit, yogurt or brown rice protein powder) Chocolate Peanut Butter and Mango Pineapple are two of our favorites

Kids in School, Date with Husband

Today was the first time in 7 years that all the children in our household were in school. Joel went to preschool for the first time, Anna entered kindergarten, and Aleyah, the pro, started her second grade year. So what’s a mom to do with a little extra time? Date my husband! After Scott and I walked Joel into his class and took the necessary pictures, we hit the beach for a soft sand run. Inspired by the physiques of the Olympic beach volleyball players, we set off on a 30 minute run through the dry, loose sand. It was a tough workout but a welcomed changes from the ordinary plodding of the pavement. And when my ultra-competitive husband states, “It’s all about completing the run,” what he really means is “Slow down Michele because you’re kicking my butt!”. 🙂 Nonetheless, he survived and we enjoyed our time together and plan on making it a weekly ritual. But the alone time was short-lived as I rushed to the store, celebrated Joel’s birthday in his class, picked up Anna, made hummus, picked up Aleyah, spent 2 hours at ballet, and drove off to church for an hour and a half before heading home and tucking in over-tired kids. All the more reason to treasure the moments that Scott and I have together!

A Friend, Not a Statistic

Statistically speaking, there are approximately 400,000 deaths each year in America due to obesity. That’s about 2000 people daily that die too soon and are robbed of enjoying life to its fullest. This number is sometimes hard to grasp until it hits close to home. Tonight we will say goodbye to our friend, Ron. Last month, Ron entered the hospital with various complications mainly due to obesity, and he lost the battle this past Friday night. But he is not a statistic to us. He was a friend, a loyal youth worker, and a dedicated church member that would serve anytime, in any way. He was on the road to lose that weight- working out, beginning to change his diet, and even trying out for The Biggest Loser. But this epidemic got him before he could conquer it.

During both Bible Study and church service yesterday, God reminded me of how He is a God that is all-inclusive.  The God of Abraham, Issac, and Jacob is the God that extends the invitation for salvation to each and every person who has and will be born on Earth. The God who chose the Jews to be His people, is the God who chose to use Rahab, a pagan prostitute and Ruth, a Moabitess, to bring forth the Messiah, Jesus. They recognized that God was who He said He was, and they chose to worship and follow Him. God never desires anyone to be without Him. He purposely ensured that everyone had a way to Him and His kingdom- through the blood of His son, Jesus. Jesus proclaimed that He is the way, the truth, and the life, and that no one comes to the Father but through him. (John 14:6) I often hear nonbelievers say that this “one and only way” thinking is narrow-minded. I beg to differ. There is no linear thinking or selfishness in sacrificing one’s life (as Jesus did) or sending your only son to the cross (as God the Father did) in order to pave the path to eternal life for each and every person who has rejected you (as we all have rejected God).

I know that our Hawaiian friend, Ron, is glorifying Jesus in Heaven at this moment and for every moment from here on out. He would want nothing more than for you to know the One who saved him.

The Lord is not slow to fulfill his promise as some count slowness, but is patient toward you, not wishing that any should perish, but that all should reach repentance. 2 Peter 3:9

Summertime Pastimes

This past week has been a celebration of food, family, and successes! From setting up  “Chopped” at my kitchen table for my girls (they had only been bugging me to do this for a good part of the summer), to visiting our favorite local mango spot twice,  to having  family and friends over for dinner, to watching my 5 year old conquer bike riding, this “close to the end of summer” week has been carefree and fun!

For our lunchtime session of “Chopped”, I gave my girls pickles, baked red potatoes, leftover taco meat, and a red pepper. They HAD to use each of these ingredients, but were able to use additional items from the kitchen. Aleyah’s creation was a semi-hollowed-out potato stuffed with meat and topped with melted, grated cheese and red pepper slices topped with chopped carrots and pickles. She also added a slice pf pita topped with hummus and pretzel pieces.

Anna also made the same meat/potato combo, but she made a carrot, pickle, and red pepper salad, and then asked for grapes and  bananas to make a fruit salad as well. Another prime example of the creator eating AND enjoying their own creation!

Every summer we take the scenic drive up to our favorite mango spot. There is a family that has mango tress galore on their property and sell to the locals during the summer. For $20 we get a large bucket of various mangoes. The free samples were gnawed upon by my children until there was just a sliver of soggy mango skin left. We have been enjoying fresh mangoes as well as mango smoothies throughout the week!

All of those mango smoothies have paid off because my Anna took to the streets with her bike and her Daddy this week and successfully rode her bike for the first time! I love how kids beam with confidence when they are victorious in accomplishing this rite of passage. Two down and one to go before we begin to build family bike riding memories- can’t wait until all five of us can hop on our bikes and go!

The highlight of our week was spending time with out-of-town family. Our Sunday night dinner, our visit to the zoo, and even a simple trip to Sam’s Club topped this week. Thank you Uncle Chris and Aunt Wendy for coming- we love you!

All of these activities would mean little without my loved ones beside me. Take the time this weekend to enjoy the carefree summer routine- spend it with the ones you love doing the things that they love. There are no regrets in savoring these God-given moments!

A Farmer’s Market and A Pirate’s Ship

Today I took the kids to the local farmer’s market with the intent of allowing them to choose which fruits and veggies to buy to enjoy with  our lunch and for the next few days. Aleyah picked out pickling cucumbers and a pineapple. Anna chose a mango and yellow squash, while Joel wanted apples (so adventurous!).

After our hot stroll through the market, we walked down to the river to the pirate ship that has been docked there. Despite the fact that we were beginning to smell like pirates due to sweat dripping from our bodies, Joel didn’t want to leave.

Home was a welcomed respite from the heat, and the kids enjoyed their PB & J and PB & honey sandwiches along  with their farmer’s market picks of fresh mango, cucumbers, and apple slices. A great finish to a fun morning!

The Orchestration of a Baseball Game

Several months ago, Scott had the opportunity to purchase two tickets to a Miami Marlins game for their inaugural season in the new stadium. He called me and asked which date I wanted to go, and I told him to choose. He picked June 25th, and we stored that date in our iPhones. And that was that for awhile.

Two weeks ago, when I had my appointment with the eye specialist in Palm Beach (about an hour and a half south of us), she stated that she needed to see me back in two weeks as opposed to the monthly visits that I had been doing. She is only in the Palm Beach office twice a month, so what date did I have to come back and see her? June 26th!

What does that tell me? It tells me that God had orchestrated the timing of the baseball game to coincide with that of my doctor’s appointment. So a 3 hour trip down south to a baseball game was “conveniently” tied into a necessary doctor’s appointment. Scott and I booked a hotel room and had a mini-getaway! God knew that a little fun was needed to break up the mundane, a bit of R&R was a required to shake up the necessary. The game was relaxing and yummy (latin cuisine at the ballpark!) and, thankfully, the doctor’s appointment came with good news of the beginning stages of healing. Thank you to all of you who have lifted me up in prayer. They are coveted and appreciated!

One of my favorite names for God is Jehovah-Jireh: The Lord Will Provide or The Lord Who Will See To It. He is the One who takes care of our needs, and the One who also gives us gifts. God is good all the time, and all the time God is good!

Every good gift and every perfect gift is from above, coming down from the Father of lights with whom there is no variation or shadow due to change. James 1:17

Grilled to Perfection! Day 4 of Cooking Class

For our final day of cooking together, the class decided to grill up some sandwiches. Spread out before us on the table was whole wheat bread, wheat wraps, 2% cheddar and 2% provolone cheese, Applegate ham,  peaches, apples, bananas, peanut butter and cinnamon raisin hummus. I tried to offer tomato slices, pickles, and spinach but had no takers. 😦

For the creamy round, we ended up with grilled peanut butter and banana sandwiches, a grilled peanut butter and peach and apple sandwich, and a grilled cinnamon raisin hummus and banana sandwich.

For the ooey, gooey, cheesy round, we grilled up ham and cheese sandwiches for most everyone, and a couple of good ‘ol regular grilled cheeses for two of the kids.

And what’s a sandwich without chips? When we went shopping at Publix, we grabbed a bag of purple potatoes, and I thinly sliced them on my mandloine, laid them out in a single layer on a cookie sheet, sprayed them with olive oil, and baked them at 450 for  about 15 minutes or so. As soon as they came out of the oven, I sprinkled them with salt and pepper, and served them to the group until there was just enough left for me. 🙂

For dessert, I shared my all-time favorite cookie recipe- Publix’s breakfast cookies. We even made extra so Madi, one of our students, could share them at her birthday sleepover this weekend.

The greatest rewards from the week included:

  • Ella going home and making her family the tomato and cucumber salad we made on Day 2
  • Knowing that one of Madi’s favorite recipes was the summer salad
  • Aleyah telling her Daddy how to read the ingredients list (i.e. the first ingredient on the list is the main ingredient)
  • Madi informing her grandfather that the white grits he was eating are not as nutritional as the yellow ones

Sometimes we don’t think they hear us, and sometimes we predetermine what their tastes are, and so we don’t “allow” them to explore new foods. The above highlights show us just the opposite!

The pictures below of nail painting was part of a promise … I made sure to leave a little extra time at the end of this day because my daughters have been wanting to paint finger nails and toe nails with their old and new friends. The only spill we had was made by yours truly. 😛

Spaghetti and Slurpees – Day 3 of Cooking Class

Today we took our field trip to Publix so we could buy our ingredients for tomorrow’s meal. We voted to have grilled sandwiches of various kinds, homemade purple potato chips, and oatmeal raisin cranberry chocolate chips cookies.

When we returned home, we enjoyed whole wheat spaghetti with meat sauce, and we had an assortment of salad toppings so each girl was able to create a beautiful layered salad. Our dessert was my homemade slurpees which we decided to rename Italian ice since we had an Italian theme for the day. 🙂

I am looking forward to seeing their sandwich creations tomorrow. This could get interesting!

An Olympic Tea Party – Cooking Class Day 2

Because breakfast was such a hit last time around, I decided to do it again with a few variations. In honor of the upcoming Summer Olympics in London, we made orange cinnamon scones and served them up with some sun tea that we made. We pulled out fancy tea cups and saucers to complete the experience. In addition to our DELICIOUS scones, we made our own breakfast sausage patties, grits, and scrambled eggs. Since it is important to me to include fruits and veggies into almost every meal I eat, I also made a tomato and cucumber salad.

Breakfast Sausage Patties

  • 1/3 lb lean ground turkey

  • 1/4 cup celery, diced

  • 1/4 cup onion, diced

  • 1 clove garlic, minced

  • 1 teaspoon dried sage

  • 2 teaspoons fresh rosemary, chopped

  • 1/4 teaspoon paprika

  • a dash of nutmeg

Saute celery, onion, and garlic in olive oil over medium heat for 5 minutes. Combine the vegetables and the remaining ingredients in a large bowl. Mix with your hands and form into golf ball-sized balls and then gently flatten. Bake in a 400 degree oven for ten minutes or brown in a pan, about 3-4 minutes per side. Makes about 10-12 patties
