Sweetness Abounds!
After a lull in production as I am expanding, here are some of the new features to my hummus:
- A new commercial kitchen! This is a “working” kitchen not a retail spot (at this time), but customers are more than welcomed to schedule a time to come by and pick up orders.
- Super-charge your hummus with a special order of ground flax seeds.
- Create a nut-free hummus with sunflower butter in place of an almond or peanut base.
- Visit me at the Thursday Rockledge Farmer’s Market and at the West Melbourne’s Farmer’s Market on Fridays. I am still at the Melbourne Beach Farmer’s Market on Saturdays.
- A new possible retail spot – stay tuned!
- Gift certificates are now available 🙂

Phys/Men/ter/cise – n. Exercising both body and mind simultaneously
This is my new name for my 90 minute ballet class. When I started the beginner’s class in January, it was just to refresh my memory with the names of the steps and my body with the movements. Now that I’ve moved myself “up” to the next level, I find that this is both a workout for my mind and my body. I must say that there is often a disconnect or a slow motion synapse between my brain and my body. I hear the names of the steps, the sequence that they are to be done in, and even see them demonstrated by the teacher. But that doesn’t always mean I get it right. I must say that today I felt more confident at the barre. The floor work, however, is still a struggle. My mind comprehends, but those French words get lost in translation, and they don’t always flow out gracefully through my body. Nonetheless, I am exercising both my mind and my body and, while I love the often “mindlessness” I find in running, I also like the challenge of relearning and reacquainting myself with an old love- ballet.

Princess Leia Pizza Buns

Our family loves Star Wars! Tonight, to go along with The Return of the Jedi, we made homemade pizza and turned some of our dough into Leia’s side buns. The kids rolled and stretched out some dough into about an 8″ strip, topped it with sauce and cheese, and rolled it up like a cinnamon roll. We baked them at 400 for about 20 minutes and served them with extra pizza sauce for dipping. As Yoda would say, “Enjoy the pizza, you will.”

New! Nut-free Sweet Hummus

During my farmer’s market days, I have run into many people who have various allergies. While my product is ideal for those with wheat, dairy, and soy allergies, it is not so for those with nut allergies. I had two individuals that are able to eat seeds, so I now can substitute sunflower seed butter for the almond butter or peanut butter in the cinnamon raisin, spiced fig, and chocolate peanut butter hummus. My husband gave it a try and declared that he actually liked it better! (he is a sunflower seed lover thanks to countless innings of baseball and softball) The only downside is that those made with the sunbutter will have an increase in price to $7.50 due to the cost of ingredients and it being a specially made item. If you are interested in purchasing some, please let me know!

Hold Tight! Work in Progress
I will be at the Melbourne Beach Farmer’s Market this Saturday, the 9th from 9:00-3:00. Come by and see me because my product will be on a one week hiatus as I switch commercial kitchens and wait for permits to be completed. (Love that government intervention!) In fact, if you go to Downtown Produce or The Green Turtle, the shelves are bare 😦
There are many highs and lows of running a small business. It’s been a crazy week or so, and I am excited about the changes that will help my product reach a larger client base. My goal is to continue to use my product as a way to promote healthy and natural eating. This was once again brought to the forefront of my mind as I witnessed the unhealthy eating habits of our children when I went along for my second grader’s field trip this past Tuesday. Oh how I would love to provide a nutritious meal for each and every one of those children!
Please bear with me as I make changes and please keep telling your friends and family about my sweet hummus. Word of mouth is the best publicity ever!

Roasted Coconut Lime Corn on the Cob
In keeping with last night’s corn theme, here is one of my latest recipes utilizing one of my sweet hummus flavors. Since traditional Mexican cuisine marries lime with corn, I conjured up the idea of roasting corn with Coconut Lime Hummus. The recipe is simple:

4 Tablespoons Coconut Lime Hummus

2 teaspoons extra virgin olive oil or coconut oil
-
2 -3 ears of organic corn
Mix the oil and hummus together. Pull back husks from corn and spread on hummus mixture. Pull husks back over ears and trim any excess husk/silks from the tip of the corn. Roast in a 350 degree oven for about 30 minutes or until kernels are soft when squeezed. You can also grill in the same way over a low flame.

Florida Shortcake
Saturday, during my trip to Whole Foods, I bought their New York-style Cornbread (surprise, surprise). We ate it with our Chex Mix Chicken after church yesterday, and then with leftover soup and chicken with last night’s dinner. As we finished up last night, Aleyah decided that we should make a strawberry shortcake with the leftover cornbread. What a fabulous idea! So tonight, after ballet for the girls and basketball for Joel, we had Black Beans and Brown Rice with Organic Chicken Thighs and Al Fresco Chicken Sausage. (Oh was it yummy!) Then we ended it all on a sweet note – our new Florida Shortcake. Pairing two of Florida’s favorite crops- strawberries and corn- was a match made in “Cracker” heaven 🙂 We topped the shortcake with a scoop of Stonyfield’s Vanilla Greek Frozen Yogurt and created a table of smiles.

It’s Top Priority!

The above package just left Melbourne, FL and is heading to our nation’s capital. On Wednesday, the Chocolate Peanut Butter, Coconut Lime, and Spiced Fig Hummus will be arriving in the DC area. I’m getting the hang of this shipping thing which is good since the requests have steadily increased over the past couple of months.
