Healthy Eating No Matter Where You Are
With the beginning of travel season just ahead, it is timely to share tips and encouragement to eat well on the road and wherever your journeys may take you! Thank you to Cole Mill for contributing to today’s post. You can check out more of his healthy living tips at his blog, Cole’s Mill.
When you go on the road, there is no reason to resign yourself to an extra five or ten pounds. There are so many opportunities to have high-fat deep-fried food while you are on vacation, and if you don’t have a plan, it’s going to be very easy to simply pile your plate high and forget all about your dietary goals. Take a moment to think about how you can stay on top of your eating while you are out of town.
Eat Fresh
The rules that work at home also work while you are on road. Before you head to your hotel or wherever you are staying, pick up some healthy snacks like fruit. Whether you love apples, oranges, plums or peaches, pick up a bag and leave them close to hand. Fruit is great because you can eat it out of hand, and it requires no cooking at all. The sweetness of fruit helps you avoid sugary treats like candy.
Plan Out Your Meals
Any nutritionist will tell you that you should plan your meals. If you know what kind of meals you are going to be eating, you will not have to make snap decisions that will end with you at a fast food restaurant. You can use online maps to find out what food options are available in the area or on the way. Make it a point to avoid fast-food spots if you can; instead look for places where you can sit down.
Picking the Right Hotel
Often overlooked, being in the right hotel that can accommodate to your healthy lifestyle can make all the difference in the world. Doing a little research to determine the best place to stay is very important. I have tried all sorts of methods and determined that the most effective form of research is online reviews. I was recently traveling out west and found a great site that listed the hotels in Las Vegas along with reviews regarding not only their amenities but also on restaurants nearby and things to do. This was so very helpful and was pivotal in booking the perfect hotel for my lifestyle.
Salad and Fish
There are some restaurants that are going to be better for you than others. For example, avoid buffets and any sort of all-you-can eat facilities. Places like this encourage overeating, and you’ll find that it is hard to stick with your rules when you are confronted with a buffet. Instead, look for a salad bar, where you can have as many greens as you like, or for a place that specializes in baked fish or steamed fish. If you can avoid the bad foods and make the right and healthy choices than you will be in great shape!

Experience the Farmer’s Market to the Fullest!
My Tips for a Successful Trip to Your Local Farmer’s Market

Come hungry! Don’t go out to eat beforehand. Visit the market, eat the samples, and THEN go to your favorite restaurant. You’ll save money since you won’t be so hungry!

Toss the gum and mints and don’t brush your teeth just before stepping out the door. It interferes with the whole tasting experience!

Bring dollar bills (lots of them!)
-
Bring a reusable bag- you’ll fill it quickly!

Bring a cooler in your car if you’ll be running around after visiting so you can place any chilled products in there to keep cool.

Summer Kids’ Cooking Camps – Sign Up Today!
In my spare time this summer 😉 I am teaching a cooking camp for kids. This will be my third summer of hosting these camps, and I love doing this and working with the kids as we create healthy and fun meals together. You click here to see some of the fun we had last year. We focus on creating our lunches from scratch, and I include several hands-on opportunities for the children to assist in preparation and cooking. They also receive information to help them make the best food choices for their growing bodies! Here are the dates and a basic menu for each of the two weeks:
Tuesday, May28th-Friday, May 31st

The menu will be locally-inspired including garden fresh fruits and vegetables, local meats and seafood

We will have the opportunity to visit a local organic farm one of the days!
Monday, July15-Thursday, July 18th

The menu will focus on international fare such as tandoori chicken and Brazilian chimichurri.

We will take a “field trip” this week as well, but I have not finalized our destination yet.

Green Smoothie Inspired by Farmer’s Market Vendor
Last Monday, Scott and I had a conference to attend in Orlando. We hopped over to the Winter Park area and visited Audubon Park Community Market. This was a small market in a courtyard, but was HIGHLY attended. The vendors truly showcased local ingredients and products. I convinced Scott to order a green smoothie from an a la carte smoothie menu. We chose almond milk, kale, blueberries, and bananas (see top picture of empty cup). My skeptical husband was pleasantly surprised by how much he liked it. When we returned home, I made the same smoothie but replaced it with some of the frozen strawberries I had stocked away in my freezer. (see bottom picture of full glass before I drank it all gone!) I do think I like the blueberries better, but the strawberries work well too. Here is what I did:

2 kale leaves pulled off stem

1 cup strawberries

1 1/2 bananas
-
12 oz unsweetened almond milk
Place all ingredients into a blender and mix. This make about 2 large smoothies.

Kale Caesar Salad – Dressed and Ready to Go!
We all have those days that are packed full, and we need to eat on the run. When I was at the Patrick Island Market the other day, I had to take something with me for lunch so I took a roasted chicken Caesar salad. To make it an extra-easy meal, I wanted it already dressed and ready to be eaten so I used kale rather than romaine. The heartiness of the kale keeps the salad from wilting because we all know that soggy salads are not so scrumptious. I placed my salad in one of my washed out Chobani yogurt containers (32 oz one), placed a plastic fork in it, and snapped on the top. At lunchtime, I grabbed my Chobani container, popped it open, and lunch was served!

Time to Fill the Baskets!
I’m set to fill the kids’ Easter baskets, and here is what this mama bunny is filling them with:
- Babybel cheese (they love these little discs of cheese!)
- Trail mix
- Skittles – a couple ‘fun sized’ bags (yes, they are allowed some treats!)
- Annie’s fruit snacks
- Yummy Earth Organic Lollipops
- Buddy Fruits squeezable fruit
- Dove dark chocolate mini bunnies
- Peanuts in the shell to go along with…
- Tickets to a Brevard County manatees game!
