Layered Greek Salad – “A Salad For Each Week” #23

 

I just LOVE anything Greek! Need I say more?!

Layered Greek Salad

Spread the hummus on the bottom of a 9×13 pan. Sprinkle feta cheese over the hummus, place the chopped cucumbers over the feta, and then spread the spinach leaves on top of the cucumbers. Place tomatoes and black olives over the spinach and then drizzle tzatziki sauce over the salad just before serving. Spoon out the salad onto a plate and serve with pita chips if desired.

Cool Zucchini, Carrot, and Radish Salad – “A Salad For Each Week” #22

This is one of my favorite hot weather salads. It is light, cool, refreshing, and is the perfect dish to eat for keeping hydrated! Keep it in the fridge and toss with your favorite lettuce for a super quick green salad.

 

Cool Zucchini, Carrot, and Radish Salad

  • 2 medium zucchini

  • 2 large carrots

  • 8 radishes

  • 1/3 cup onion

  • 1 lemon, juiced

  • 1 tablespoon rice vinegar

  • 1/4 teaspoon pepper

  • 1/2 teaspoon garlic powder

  • 1/ cup freshly chopped parsley

Thinly slice the vegetables into disks using a food processor or mandoline. Add them to a medium bowl. Add all other remaining ingredients and stir until coated. Refrigerate until ready to serve.
