A Happy Fact:

Blood levels of trans–fatty acids in white adults in the U.S. population decreased by 58% from 2000 to 2009!

Trans-fatty acids (or hydrogenated oils as it reads in ingredient labels) raises your “bad” (LDL) cholesterol and lowers your “good” (HDL) cholesterol.

This pizza is DELICIOUS! Just a warning though- It’s addictive too! Be careful because just 1/5 of the pizza has over 300 calories. I suggest topping it with grilled chicken, ground turkey breast, and/or veggies and serve with a side salad so you don’t eat ha;f the pizza!

A Short Break From the Daily Grind

My friend Amy (a great photographer and story-teller) recently blogged about how her family comes from their home in the Orlando area to Melbourne for a mini-vacation. Quite the opposite is true for us. My family and I enjoy leaving our home in Melbourne and heading into Orlando for a break from the norm. We just returned Saturday from a 3-day mini vacation to O-town. It’s been a long, stressful spring and this trip was a welcomed break for us all. I am grateful for the bottom of the barrel- it was scraped and scratched until every last penny was pocketed for our adventure! Thankfully, we had passes to Disney and Sea World so we visited the Magic Kingdom on Thursday, hung out at the hotel and swam on Friday, and went to Sea World together for the first time on Saturday.

My favorite memories of our weekend include:

  • Fencing 101 for Joel with Captain Jack Sparrow ( He was so brave!)

  • A wonderful dinner at Maggiano’s – The kids were very well-behaved, and we received several compliments. 🙂

  • Buying my first pair of black Nike Shox. (I think they make me run faster.)

  • Watching the kids’ faces as they took in the sights of the Dolphin show at Sea World- they were completely mesmerized!

  • Coming home to a clean house. My mom swept, vacuumed, and mopped my floors! She is the BEST!

A mental health break is vital to my sanity, and I am thankful for the escape. Now back into the swing of things…

Stuffed Mini Peppers with Fresh Cucumber and Tomato Salsa

When a child colors a picture, a rainbow often appears next to the golden sun that shines down upon a grassy field filled with flowers. Since colors are so inciting to little ones in their creative worlds, why not incorporate color into their meal time as well? Here is a simple and colorful side dish that small hands can create and manage easily. There were only a few pepper halves left after dinner, so I saved them for my salad for the next day.

  • 8-10 mini peppers
  • 1/2 cup cucumber, diced
  • 1/2 cup tomatoes, diced
  • 2 teaspoons rice wine vinegar
  • light drizzle of extra virgin olive oil
  • salt and pepper to taste
  • 1 tablespoon fresh oregano or parsley

Cut tops off peppers, slice in half, and remove ribs and seeds. In a bowl, combine the remaining ingredients and stir. Scoop some of the salsa into each pepper. Refrigerate until ready to serve.

The kids helped with this, so the “stuffing” of the peppers soon became “topping” the peppers!

For the past several months, anything that has anti-inflammatory properties is something I have been seeking since I am having issues with my eyes. So when these posts popped up on my FB page, I checked them out. Each list has 10 foods and reasons why these foods are or are not beneficial in helping the body fight inflammation. Serving Up 9.5 lbs of Sugar to Our Kids

This chart was posted on Jamie Oliver’s  Space Coast Food Revolution Day’s FB page. I cringed as I saw this. In just 180 days,  a typical child will consume 9.5 lbs of sugar if they drink just two sugary beverages a day. This does not include the cookies in their lunchboxes or on their lunch trays, and it doesn’t include the candy bars from the vending machines as an afternoon “snack”. The saddest truth is that this is a result, for the most part, of parents who are either ignorant or apathetic when it comes to their children’s diets. While we can’t be there for every food choice they make, we can make sure our homes are stocked full of nutritious foods and that we set the example by making  wise and healthy choices. Here are some more facts:

If you have not yet seen the 60 Minutes segment titled “Is Sugar Toxic?”, take the 20 minutes or so to see the research that is being done to see to the effects of a high-sugar diet. It is educational and eye-opening as to how our bodies negatively respond to this processed substance.

Kettlebells For Me!

While some wives may get offended if their husbands came home bearing a gift suggesting they exercise, I LOVE my workout equipment surprises that Scott brings to me! While out garage saling on Saturday, he came across a brand new, still sealed in the box set of Jillian Michaels kettlebells. This morning was the trial run for these new-to-me weights. I found this kettlebell workout from Women’s Health Magazine, and completed two sets of the 8 moves.  So in 20 minutes, research says it is possible to burn an initial 300 calories and then continue to burn more as the muscles tear down and repair from the workout. Not a bad return for my investment (both the time and the money!)

Summer Cooking Class – 2 Weeks Available!!

If you live along the Space Coast and are looking for something to keep your kids occupied, I am planning on doing two  camps this summer. Each 4-day camp will be 2 days of cooking, 1 day of meal planning (the kids will choose from one of three menus) and grocery shopping, and the 4th day will be making what they planned and shopped for. The cost will be $50 per student per camp, or $90 for two siblings. The dates are:

Tuesday, May 29th-Friday, June 1

and

Monday, June 18th- Thursday, June 21st

Each day will start at 10:30 and will end at 12:30. This is a hands-on class where they learn cooking and baking techniques, how and why to make healthy food choices, and have the opportunity to enjoy and savor their handiwork! Please let me know ASAP if you are interested. This is first come, first serve.
