Aloha to Day 2 of Cooking Camp!

For Day 2 of our fun-filled cooking class, we flew into the Pacific and landed on the Hawaiian Islands. Our luau menu consisted of:

  • Grilled Polynesian Chicken – Marinated in pineapple juice and seasoned with salt, pepper, garlic, and ginger

  • Coconut Brown Rice – Brown rice cooked in light coconut milk with some ginger and minced onion

  • Grilled Zucchini and Pineapple – Bite-sized pieces misted with olive oil and grilled in my grill basket

  • Hula Pie- Vanilla Ice Cream* that we allowed to soften, mixed with chopped macadamia nuts, in a graham cracker crust, with a dark chocolate topping

*I used the real thing. I almost went for the frozen yogurt or light ice cream, but the calories were the same per 1/2 cup serving. Yes, there is more fat in the ice cream, but it has all-natural ingredients- no corn syrup, no chemicals. I do love Stonyfield’s Frozen Yogurt but it is a bit pricey and the pie would’ve been a $25 dessert, so I went with the second best option.

Graham Cracker Crust

Graham Cracker Crust

  • 1 package Whole Foods 365Cinnamon  Graham Crackers, crushed
  • 1/3 cup Earth Balance butter spread

Melt butter in 15-20 second intervals in the microwave. Mix with cracker crumbs and press into a pie pan.

For a blind bake (baking crust only when filling needs no baking)-Bake at 350 for about 20 minutes. Allow to cool completely before pouring in filling.

And it’s nice to have a little help crushing up the crackers!

Kids’ Cooking Class- Week 1, Day 1

This week I am holding my first of two 4-day long kids’ cooking classes. Yesterday, I had ten 4-8 year-old children sitting around my kitchen tables (I had to add one!). During our two hours, we made and ate lunch together. My idea for the day was to take a fast food kid’s meal and make it healthy, so here is what we enjoyed…

  • Grilled Turkey Sliders (with toppings of their choice)

  • Oven Fries – Regular and Sweet Potatoes

  • Crudités Tray – Each table had the opportunity to arrange their carrots, cucumber slices, and celery sticks.

  • And for dessert- A Frosty for everyone!

I hope to create a love of cooking within these children as well as instilling in them the importance of nutrition. If you have seen Star Wars as many times as my family has, then you are very familiar with the evil Chancellor Palpatine who appoints himself as Emperor, and then wins over Anakin Skywalker to the Dark Side. Free Slurpee Day Tomorrow at 7-11 (Better Yet, Make One Yourself)

Tomorrow, May 23rd, you can receive a free Slurpee from  7-11. They are promoting their new “Sugar-free” Slurpee made with Splenda. Fewer calories? Yes. Better for you? No. Still no nutritional value with possible adverse side effects from a processed substance. No thank you.

I recently posted my recipe for a homemade version of a Slurpee, AND Publix just so happens to  have Old Orchard Frozen Juice and Ritz seltzer on sale to make it!  How “convenient”!

Fun at Food Revolution Day

This past Saturday was my “Mother’s Day”. With a husband in the ministry, Sundays are just not an ideal time for me  celebrate a special occasion, so Saturday was my day to claim as my own. My mom came over in the morning and allowed me to get in a run before we took the kids to Food Revolution Day.

It was a beautiful day at Rockledge Gardens thanks to the weather and the luscious landscaping. The kids enjoyed the fountains, ponds, and the butterflies that fluttered about them.

We test-tasted

  • carrot salad
  • carrot juice
  • black bean and salsa dip
  • peanut butter and strawberry sandwiches
  • green smoothies
  • spicy vegetarian sausage

I also had the opportunity to hand out samples of my Spiced Fig Hummus in hopes of drumming up some future business as I get ready to apply for my food license!

They had the opportunity to plant cucumber seeds as well.

They also received an “Eat the Rainbow” chart which is an excellent visual aid to get kids (or yourself) to eat each color of the rainbow every day. Click here to download the chart, or get the kids even more involved by having  them make their own chart of rainbow colors.

Your Grocery Bill Analyzed – Cost of Healthy Food vs. Junk Food

As you head off to the grocery store this weekend, do not use the excuse of  “healthy food is more expensive than unhealthy food” as you make your selections. According to a recent USDA study, you get more “bang for your buck” when you purchase fruit, whole grains, and the like. The example given was this:

 A typical consumer could eat two or three 240-calorie doughnuts and not feel stuffed but one 105-calorie banana satisfies hunger more and provides better nutrition.

I spend $30 a week on my organic produce box, and some of the veggies last more than a week (onion, potatoes, etc.) and the rest is finished off within the week. I do supplement some because we go through bananas and some other fruits fairly quickly. It is a great bargain for the time and effort it saves me, (I order online, pick up the box, and drive away!)  and the nutrition that I know my family is receiving.
