This is my last post about my cooking class that I hosted last week. I couldn’t resist these beautiful faces and had to share them. Thank you to each child who came and to all the parents that allowed me the opportunity to teach them!  Check out my last 4 posts to see just how much fun we had together!

Publix Field Trip on Day 3 – Plan and Shop

For Day3, we took a trip to our local Publix. We decided the day before that breakfast would be our final meal to make together. On the menu: eggs, sausage, grits, and pancakes. As we strolled through the store (amid many looks and stares!), we shopped for the breakfast items we needed and discussed the importance of the right ingredients. One of the Publix associates gifted us with hair nets. We all looked fabulous as you can see! A HUGE thank you to Publix for their gracious and patient employees and service- You are the BEST in town! And another thank you to Estelle Zaret for helping out and taking such beautiful pictures! Kids’ Cooking Class- Week 1, Day 1

This week I am holding my first of two 4-day long kids’ cooking classes. Yesterday, I had ten 4-8 year-old children sitting around my kitchen tables (I had to add one!). During our two hours, we made and ate lunch together. My idea for the day was to take a fast food kid’s meal and make it healthy, so here is what we enjoyed…

  • Grilled Turkey Sliders (with toppings of their choice)

  • Oven Fries – Regular and Sweet Potatoes

  • Crudités Tray – Each table had the opportunity to arrange their carrots, cucumber slices, and celery sticks.

  • And for dessert- A Frosty for everyone!

I hope to create a love of cooking within these children as well as instilling in them the importance of nutrition. Soda: The Dark Side

If you have seen Star Wars as many times as my family has, then you are very familiar with the evil Chancellor Palpatine who appoints himself as Emperor, and then wins over Anakin Skywalker to the Dark Side. Thankfully, many years later, Luke Skywalker sees that there is still some good left in his father, Darth Vader, and saves him from the Dark Side. Unfortunately, soda , a very highly consumed beverage, is just like the Emperor- no good inside whatsoever. And if you think that diet soda is similar to Darth Vader- a dark outside, but really okay in the end- you are mistaken. Here are just a handful of studies that have come forth recently about the pitfalls of drinking soda- regular AND diet:

Trans Fat Levels Are Decreasing!

A Happy Fact:

Blood levels of trans–fatty acids in white adults in the U.S. population decreased by 58% from 2000 to 2009!

Trans-fatty acids (or hydrogenated oils as it reads in ingredient labels) raises your “bad” (LDL) cholesterol and lowers your “good” (HDL) cholesterol.

A Short Break From the Daily Grind

My friend Amy (a great photographer and story-teller) recently blogged about how her family comes from their home in the Orlando area to Melbourne for a mini-vacation. Quite the opposite is true for us. My family and I enjoy leaving our home in Melbourne and heading into Orlando for a break from the norm. We just returned Saturday from a 3-day mini vacation to O-town. It’s been a long, stressful spring and this trip was a welcomed break for us all. I am grateful for the bottom of the barrel- it was scraped and scratched until every last penny was pocketed for our adventure! Thankfully, we had passes to Disney and Sea World so we visited the Magic Kingdom on Thursday, hung out at the hotel and swam on Friday, and went to Sea World together for the first time on Saturday.

My favorite memories of our weekend include:

  • Fencing 101 for Joel with Captain Jack Sparrow ( He was so brave!)

  • A wonderful dinner at Maggiano’s – The kids were very well-behaved, and we received several compliments. 🙂

  • Buying my first pair of black Nike Shox. (I think they make me run faster.)

  • Watching the kids’ faces as they took in the sights of the Dolphin show at Sea World- they were completely mesmerized!

  • Coming home to a clean house. My mom swept, vacuumed, and mopped my floors! She is the BEST!

A mental health break is vital to my sanity, and I am thankful for the escape. Now back into the swing of things…

Kettlebells For Me!

While some wives may get offended if their husbands came home bearing a gift suggesting they exercise, I LOVE my workout equipment surprises that Scott brings to me! While out garage saling on Saturday, he came across a brand new, still sealed in the box set of Jillian Michaels kettlebells. This morning was the trial run for these new-to-me weights. I found this kettlebell workout from Women’s Health Magazine, and completed two sets of the 8 moves.  So in 20 minutes, research says it is possible to burn an initial 300 calories and then continue to burn more as the muscles tear down and repair from the workout. Not a bad return for my investment (both the time and the money!)

Why I Love Thursdays!

Thursdays begin our down time for the weekend. One of my favorite things about today is picking up our organic box of produce from Lily’s Organic Produce. After we pick up Aleyah from school, we swing by and get our fruits and veggies. When we get home, I put the kids to work washing, cutting, and eating. Today, Anna gave the corn on the cob a haircut before they went into the oven. She also helped cut the romaine. Joel helped season the zucchini and squash before they also went into the oven, and Aleyah helped with the romaine after her homework was finished. And what they cut up and fix, they more often than not will also eat. I also love that this box is an assortment of produce, and it makes me try various items that I might not normally purchase at the supermarket. So here’s to Thursday nights at the Terry household!

Bursts of Energy

Here are some helpful tips to increase your energy levels and keep them up throughout the day.

Take a brisk 10 Minute Walk – This elevates your energy levels for 2 hours afterward.

Drink Water– 2/3 of Americans do not drink enough water (I’m guilty!) which can cause dehydration that leads to loss of energy. Drink plenty of water and eat water-based foods such as cucumbers and watermelon.

Eat Nuts– They are loaded with nutrients such as copper, magnesium, selenium and calcium which are needed for balanced energy levels.

Rosemary Spritz– Dr. Oz recommends using a  rosemary energy mist. Place  a sprig of rosemary into a spritzer bottle, fill it with water and let it sit over night. Take it with you, shake it up, and spritz your face for an afternoon energy boost.
