Summer Cooking Class – 2 Weeks Available!!

If you live along the Space Coast and are looking for something to keep your kids occupied, I am planning on doing two  camps this summer. Each 4-day camp will be 2 days of cooking, 1 day of meal planning (the kids will choose from one of three menus) and grocery shopping, and the 4th day will be making what they planned and shopped for. The cost will be $50 per student per camp, or $90 for two siblings. The dates are:

Tuesday, May 29th-Friday, June 1

and

Monday, June 18th- Thursday, June 21st

Each day will start at 10:30 and will end at 12:30. This is a hands-on class where they learn cooking and baking techniques, how and why to make healthy food choices, and have the opportunity to enjoy and savor their handiwork! Why I Love Thursdays!

Thursdays begin our down time for the weekend. One of my favorite things about today is picking up our organic box of produce from Lily’s Organic Produce. After we pick up Aleyah from school, we swing by and get our fruits and veggies. When we get home, I put the kids to work washing, cutting, and eating. Today, Anna gave the corn on the cob a haircut before they went into the oven. She also helped cut the romaine. Joel helped season the zucchini and squash before they also went into the oven, and Aleyah helped with the romaine after her homework was finished. And what they cut up and fix, they more often than not will also eat. I also love that this box is an assortment of produce, and it makes me try various items that I might not normally purchase at the supermarket. So here’s to Thursday nights at the Terry household!

Banana “Ice Cream”

My friend Sarah gave me this recipe about a week ago and it’s been used a few times since! So here is the “recipe”:

  • Frozen banana
  • Splash of milk

Place the banana in the blender with just a splash or so of milk. Mix until banana is completely chopped. Serve.

Additional ideas:

  • Cinnamon (we did this)
  • Vanilla or almond extract
  • Granola on top (Sarah said this is yummy)
  • Melted peanut butter on top
  • Mini chocolate chips (on top or gently mixed in)

Boost the Benefits of Green Tea

A study done at Purdue University found that a squeeze of citrus juice in a cup of green tea significantly increased the absorption of tea’s catechins. Catechins are the antioxidants found in tea that may help battle cancer cells.  When drinking green tea on its own, your body absorbs about 20% of the catechins. But, if you squeeze in a bit of lemon juice, that absorption level jumps to 80%! So enjoy your cup ‘o tea with a squirt of citrus.

Shopping for Organic on a Budget

The biggest challenge to eating whole, clean, and organic is cost. I am unable to purchase everything I would like when it comes to buying organic and all-natural products. I must decide on certain items and against others in order to stay within our budget. Last week, Fox News Health posted 10 Secrets to Affordable Organic Foods. which includes tips such as buying from your local coop, prioritizing your organic purchases, and utilizing frozen foods.

In addition to this, check out the Johnson family’s blog –   True Food Movement -Whole Foods Thrifty Challenge. This family spent just under $490 at Whole Foods for one month’s worth of groceries. She speaks of the challenges of shopping on a budget, but also the rewards of eating whole and clean (even thought it was tough at first!). It’s always helpful to have someone in your shoes to take on a challenge such as this and share their own valuable experiences and tips.

I hope this gives you some helpful hints, and that you are able to find 2 or 3 ways to help you shop for the right foods while not going over budget.

‘Eating Clean (Breakfast) on the Cheap’ – Strawberry Maple Syrup

I made this syrup to go along with the Van’s Waffles that are on sale this week at Publix. By adding the strawberries (also on sale!), it increases the fiber content of the syrup, and therefore lowers the glycemic index of the sweet, pure maple syrup.

Strawberry Maple Syrup

  • 3/4 cups chopped strawberries
  • 3/4 cup pure maple syrup
  • 1/2 teaspoon cinnamon

Place all ingredients into a sauce pan. Place over medium heat and allow to warm through- about 4-5 minutes. Serve over Van’s Waffles or your favorite whole grain pancakes. Save the leftover syrup for the morning!

According to Gallup’s Annual Health and Healthcare Survey, today’s average American woman weighs 160 pounds. That is UP 20 POUNDS from the 1990s! This increases the likelihood of the “average” woman experiencing heart disease, diabetes, cancer, and other chronic diseases. How do we combat this epidemic?
